Sunday Baking + Eton Mess + Peanut Butter Cookies: 21-27 February 2015.

Assalamu alaikum wa rahmatullahi wa barakatuhu!

In the Name of Allah, Most Gracious, Most Merciful



This week, I have made spring rolls on a day where I felt that spring was in the air.

Then, it snowed the next day so I baked a rainbow cake.
I have tried, for the first time, a tomato and orange soup. Strange, but it works.
I have nearly smoked out the entire house searing chicken legs, but it was worth it.
I made a huge mess baking soft peanut cookies (also worth it) and fell in love with bananas with brown sugar and lime.

Sunday: We decided to bake another rainbow today.
This time, a sandwich cake.
While the cakes cooled, more sweets arrived.
Time to put the cake together.
Cooled cakes, strawberries, whipped cream, strawberry jam, meringues.
If you don't have any cake around, why not make Eton Mess? All you need is the whipped cream, strawberries and meringues.
Give the strawberries a slice, the meringues a crush and mix with the whipped cream.

We, however, had rainbows to deal with.
We sandwiched the two sponges together with whipped cream, strawberry jam and thinly sliced strawberries.
Then, we piped more cream on top, gave the cake a crown of strawberries and sprinkled over crushed meringue.

 Monday: Last slice in the morning light.
Today, continuing our Monday lunch soup theme, we made a Tomato and Orange Soup.
Sounds strange but it works! The recipe was adapted from here.

 Tuesday: Dinner was peri peri chicken with potato wedges.
It turned out really well thanks to an overnight marinade and vinegar.

Wednesday: Toast with Nutella / lemon curd / honey / strawberry jam. 
Today I baked Soft Peanut Butter Cookies.
They turned out so good - soft but chewy and very moreish. I highly recommend them.

 Thursday: A morning for masala omelette.
Snacking on a banana sprinkled with lime zest, lime juice and soft light brown sugar. Try it!
Tackling a giant cauliflower and broccoli to make a Cauliflower and Broccoli Cheese.
Who would have though broccoli could taste so good?! My cauliflower cheese is here.
Looking for an easy dessert?
Defrost frozen berries until they are soft and form their own berry sauce.
Then, simply fold with sweet whipped cream and crushed meringues and voila! Eton Mess without the hassle of fresh strawberries.
