I cannot believe there are only a few weeks until Ramadan. We are really excited round here, albeit a little apprehensive of the long fasts. Inshallah, once we get into the fasting routine, we can really make the most of the blessed month.
Saturday: One of my lovely cousins gave me a bag of Buckwheat Flour and I decided to make pancakes with them for breakfast.
Buckwheat Pancakes made with buckwheat flour, plain flour, eggs, salt, black pepper and milk. I drizzled mine with golden syrup.
The perfect breakfast before a morning spent in our warm, June garden.
We made the most of the beautiful weather in the garden, and ended up mowing the lawn. These burgers were the perfect lunch. Chicken burgers, spicy mayo and lots of salad sandwiched between soft bread rolls.
Dinner was chicken curry, garlic coriander naan and salad.
Sunday: It was such a hot day and I needed a cold dessert. Thanks to some store cupboard, I managed to make this.
Quick tip for summer: Always have a box of these meringues in the cupboard. Topped with whipped cream and fresh fruit, they make the perfect dessert for warm, summer evenings.
For dinner, my mother tried out a new recipe for Gola Kebabs.
They were cooked until beautifully caramelized.
And, then we decided to smoke them using the same method here.
The kebabs were made with minced lamb, salt, red chilli powder, ground coriander, ground cumin, onion powder and breadcrumbs.
Served with slices of cool cucumber and sweet cherry tomatoes.
Along with lashings of this!
Monday: One of my favourite snacks is always just a simple plate of cold oranges and Pink Lady apples.
We have burning this candle in our house this week. It came in a large pack of Yankee candles which I bought from here.
Another favourite snack has been sweetcorn! Tinned sweetcorn mixed with salt, black pepper and red chilli powder.
Lunch in our house is usually a sandwich or salad of some kind.
This time we used wholemeal baguettes, sliced in half and then split into two.
Spread with light mayo.
Stuffed with sliced Gola Kebabs.
And, a little Cheddar.
Served up with a mountain of salad including my favourites - pickled jalapenos.
For dinner, we decided to make Chicken Fajitas.
They are so much better made from scratch - we bulked ours out with a tonne of yellow peppers and purple onions.
Anyone tried this? It is seriously good but a little indulgent.
Tuesday: What's that saying?
When life gives you lemons and limes ..
.. and oranges? Make some form of Lemonade?
Dinner was a Quick Pasta Salad using leftover chicken.
Some baby leaf salad ..
Cooked chicken, cucumber, tomatoes, sweetcorn, green chilli.
Boil up a little pasta.
And mix in cheese and onion deli filler. Serve straight away or keep in the fridge for an instant lunch!
The jasmine plant is in full bloom in the conservatory and the scent is so good!
Wednesday: More delicious snacks - plump peaches and cherries!
And, the pasta salad from yesterday is full of more flavour having spent the night in the fridge.
Thursday: A day filled with baking!
Still not 100% happy with this muffin recipe though :(
These vibrant strawberries were crying out to be baked with though.
And, I got to try out this gluten-free plain flour especially for my aunt.
Along with this tower of goodness!

My mum cooked a yummy dinner of Stuffed Chicken Breast. I've shared another version of these before but this was a new recipe. She marinaded the pounded chicken breast in creme fraiche, ground coriander, ground cumin, salt and curry powder.
The chicken was stuffed with a mixture of blanched spinach and kale blended with Red Leicester cheese, salt and black pepper.
It was then rolled, pan fried and baked. A nice change from the usual roast chicken, it was delicious and very juicy.
Friday: The day began with yesterdays baked goods being packaged up for family.
And ended with a zesty, spicy chicken noodle salad.
