This recipe is for Chocolate Brownie Cookies. A crisp cookie with a soft and squidgy inside that tastes just like a brownie - need I say more? Make them and enjoy!
A Simple List of Ingredients:
1. Plain Flour
2. Cocoa Powder
3. Baking Powder
4. Salt
5. Dark Chocolate
6. Butter
7. Light Brown Sugar
8. Eggs
9. Icing Sugar
Bismillah, let's begin!
To begin, first mix all the dry ingredients together. Place 6 ounces (170 grams) of plain flour into a bowl.
Add 2 ounces (56 grams) of cocoa powder.
1 and 1/2 teaspoons of baking powder and 1/4 teaspoon of salt
Mix well, and set aside.
Next, put 6 ounces (170 grams) of dark chocolate into a microwave safe bowl. Heat in the microwave until completely melted.
Once melted, set aside.
Next, place 4 ounces (113 grams) of softened butter into a mixer bowl.
Add 8 ounces (226 grams) of light brown sugar.
Beat until well combined.
Crack in one egg.
Mix!
Crack in a second egg.
Beat until creamy.
Then, add the melted chocolate.
And, the dry ingredients.
Mix well. The dough should be quite firm but still too sticky to roll into balls.
Chill in the fridge for 1 hour.
Then, remove from the fridge. Take a bowl of icing sugar.
Grease and line a baking tray.
Roll a tablespoon full of the dough into balls.
Roll them twice in the icing sugar. This step is completely optional.
Bake in a preheated oven at Gas Mark 4 for 12 minutes.
Allow to cool for 10 minutes.
Dust with more icing sugar, and serve!

· 4
ounces (113 grams) Butter, softened
· 8
ounces (226 grams) Light Brown Sugar
· 2
Eggs
· 8
ounces (226 grams) Icing Sugar (optional)
Method
1. Mix
the flour, cocoa powder, baking powder and salt together, and set aside.
2. Melt
the chocolate in the microwave.
3. Beat
the butter and brown sugar together until creamy. Add the eggs, one at a time,
and mix well.
4. Add
the melted chocolate and the dry ingredients, and stir well.
5. Chill
the mixture in the fridge for at 1 hour until firm.
6. Take
tablespoon fulls of the mixture, and roll into balls. Roll the balls twice in
the icing sugar, and flatten slightly, and place onto a baking tray.
7. Bake
in a preheated oven at Gas Mark 4 for 12 minutes. Cool slightly, dust with more
icing sugar, and serve!
