Assalamu alaikum wa rahmatullahi wa barakatuhu!
Even though it's winter, sometimes you do crave those cold desserts. And, if you do, I highly recommend this cheesecake. It is the easiest dessert ever to make if you have the ingredients. And, it's great to put together in advance if you are having guests over.And, it requires absolutely no baking whatsoever! Have I convinced you to make it yet?
When we eat desserts, we should try and remember the Hadith from Bukhari narrated by Hazrat Aisha (ra) that:
"The Prophet Muhammad (saw) used to like sweet edible things and honey"
When we eat this and any other desserts, we should remember this Hadith and make the intention that we are eating it because the Prophet Muhammad (saw) used to like sweet edible things. In doing this, we will gain the reward of acting out a Sunnah, inshallah.
A Simple List of Ingredients:
1. Digestive Biscuits
2. Butter
3. Full Fat Soft Cheese
4. Double Cream
5. Icing Sugar
6. Vanilla Flavouring
7. Fresh Strawberries
8. Fresh Kiwi
Bismillah, let's start!
Place 3/4 packet digestive biscuits into a bowl. You could use any biscuit you like because most biscuits work well for this.
Blitz the biscuits in a food processor or put them into a plastic food bag and bash with a rolling pin until crumbs are formed.
Next, take 5 ounces butter.
Melt the butter in the microwave.
Add the melted butter to the crushed biscuits.
Mix to combine thoroughly.
Pour the biscuit mixture into any shape cake tin. It's better to use a springform tin (this means that the bottom comes out). You can buy them here!
With the back of a spoon, press the mixture neatly in.
Chill in the fridge until set. (about an hour or so)

The next ingredient is Full Fat Soft Cheese. Make sure it's at room temperature before using.
Place 21 ounces (600 grams) of full fat soft cheese into the bowl of a standing mixer. If you don't have one, buy it here!
The next ingredient is double cream.
Pour 300ml of double cream into the bowl.
Add 3 tablespoons of icing sugar.
Using the whisk attachment, whip until smooth.
Stir in 2 tablespoons of vanilla flavouring.
Spoon the cream cheese mixture onto the set biscuit base.
Spread and smooth out.
Slice 14 ounces (400 grams) strawberries. The strawberries I used were quite tart but they were a wonderful contrast to the sweet cheese.
And, slice 9 kiwis. You could also use the fruit of your choice.
Decorate the cheesecake with the fruit, and then set in the fridge for a few hours.
When it's time to serve, remove from the tin and slice.

Strawberry
and Kiwi No-Bake Cheesecake
Ingredients

packet Digestive Biscuits

ounces (141 grams) Butter
· 21
ounces (600 grams) Philadelphia Cream Cheese
· 300
ml Double Cream
· 3
tablespoons Icing Sugar
· 2
tablespoons Vanilla Flavouring
· 14
ounces (400 grams) Fresh Strawberries
· 9

Method
1. First,
to make the base, blend the biscuits in a food processor and then place into a
bowl. Melt the butter in the microwave and add to the biscuits. Mix well and
place the mixture into a cake tin.
2. Press
well into the tin, and place into the fridge to set while you make the filling.
3. Place
the cream cheese, double cream and icing sugar into a mixer. Whisk until
smooth. Add the vanilla and stir in.
4. Spread
the mixture over the biscuit base. Slice the strawberries and kiwis, and place
them onto the cheesecake.
5. Place
in the fridge to set for a few hours, then slice and serve!
