June 2017: Food + Favourites!

I feel like this year, June was taken over by Ramadan.
Not that I minded one bit. We have been slowly but surely getting back into a normal routine post-Ramadan. But I'm already missing the atmosphere of the blessed month. Don't get me wrong, I am so happy to be eating and drinking again during the day but there is something so peaceful yet at the same time so fun about Ramadan that no other time of year can compare to. 

Here is what we've been eating and experimenting with this month:

Food: my favourite veggie pizza.
biscoff no-bake cheesecake.
bengali-style masala roast chicken.
grilled chicken, caramelized onion and cream cheese sandwiches.
pea pulao.
spicy lemon roast chicken.
spicy lemon roast chicken gravy + green yoghurt chutney.
himalayan salad.
spicy roast leg of lamb.
eton mess cake with cheesecake filling and mini meringues.
really garlicky cumin moong daal.
bengal bake curd with tamarind strawberries + almond crumble.
okra and potatoes with toasted sesame seeds.
quick pilau rice.
proper key lime pie.
grilled salmon with lime coriander butter.
char siu grilled chicken.
american-style potato salad.
cheddar and caramelised onion quiche.
7 up blended with frozen raspberries.
chicken pakoras.
sweet and salty brownies.
tandoori chicken keema and mixed vegetable spring rolls.
mooli paratha + okra and potatoes with sesame seeds + garlic cumin moong daal.
my favourite homemade chocolate ice cream.

literally putting an entire jar of biscoff spread into this cheesecake. so good!
freshly churned mango ice cream!!
iftar spread! 
first time making gol gappay / pani poori.
frying lime wedges to squeeze into my raita.
steaming lemons for achar.
stuffing rotis with a spicy cauliflower cheese filling.
cooking with paneer for the first time.
those tomatoes were so ripe and sweet!
obsessed with this tamarind concentrate - I used it with dates in a sweet and sour chutney.
lentil fritters ready for all their sauces!
a 4kg leg of lamb marinaded in a spices and yoghurt ready to roast.

ingredients out to make the easiest dessert.
tarka for daal frying in butter.
rainy days need chai.
cooking with Jersey Royal potatoes, fresh curry leaves and okra.
making a cheesecake with my favourite sweet spread.
I made the whole thing in a food processor!

including the whipped cream! who knew you could whip cream in a food processor?!
pizza night!
under all the cheese is a massive layer of baby spinach.
toasted sandwiches for a lazy Sunday night Iftar.

ready to fill with potatoes, chickpeas and spicy water.
lime zest.

for a key lime pie.

weekend dessert.

caramelising onions and peppers.
for a cheat donner kebab. I used this recipe.
on the side: these pitta flatbreads + cucumber + lettuce + pickled peppers + mayo + sour chilli garlic sauce.

putting all the summer tomatoes in a fresh tomato salsa.
pistachios being folded into my meringue.
pavlova assembly.
I used Greek yoghurt instead of whipped cream which went really well with the sweet meringue.
Tuesday night Iftar spread!
in the mood for gujarati comfort food.
putting cake mix into ...

... cookies and ...

... ice cream. the cookies were great but the ice cream was terrible because I put too much of the cake mix in.
using up leftover spring roll sheets by filling them with cheese and oregano, garlic and passata.

... pasties. I have a similar recipe on the blog here.
a layer of salted caramel in my brownies.
sea salt and brown sugar sprinkles on top.
for the coconut lovers, coconut ice.
leg of lamb about to be marinaded for Eid.
in a marinade which contained most of the ingredients in the kitchen! I used this recipe as a guide but added more spices.

it used vegetable oil in place of butter.

I baked off a few mini swirled meringues too.
the green ones were my favourite.
but the pink ones were pretty too.
assembling the cake on the night before Eid.
each layer was spread with a cheesecake filling, berry coulis, fresh berries, crumbled meringue and honey.
and, there were three layers in all.
