Ginger Soy Chicken + Sunday Nachos + Lamb Mince Two Ways: 12-18 December 2015.

how are you?
I hope you've had a good week and are ready for a little rest during these winter holidays. today, we actually had a little sunshine here! it was beautiful and a lovely change from all the grey clouds and rain, alhamdulillah.

we began the weekend with a ginger soy roast chicken. not an entire chicken but two large legs which were marinaded in a pungent sauce and then roasted off. we also baked shortbread and then dipped them in chocolate for Sunday coffee. and let's not forget Sunday dinner - we cheated and baked nachos! this week, I baked with Nutella ...
... and brown butter. those cookies are in the oven right now! we froze most of them and let me tell you, there is nothing better than fresh, homemade cookies without any of the work. also this week, I had an injection, ate the best white lentil curry ever and baked a three layer gluten-free chocolate cake. 
{I'm back! I just went to get the cookies out of the oven (and make a coffee!) and you guys, I am so happy with them. they bake so well after being frozen!}
finally, we made a batch of spicy lamb mince and used half in burgers and the other as a flatbread topping!

here's more from my week:

 Saturday: today, we cooked ginger soy roast chicken legs.
a sauce was made with soy sauce + honey + ginger + garlic + basar curry powder.
then poured over two chicken legs with the skin on.
and left to marinade for a few hours.
we also prepped carrots and potatoes. the carrots were peeled, sliced and tossed with salt, pepper and olive oil.
the potatoes were boiled and then tossed with garlic, salt, pepper and olive oil. I covered the tray with foil ready to roast for dinner.
meanwhile, we baked shortbread.
the dough was mixed and then chilled in the fridge.
time to cut!
sprinkle with sugar and bake!
the remaining dough was re-rolled.
and finished off!
you can't beat fresh shortbread!

at dinner, the chicken was roasted until cooked and golden. the sauce at the bottom was amazing! I adapted this recipe.
the veg was also done! the garlic roast potatoes were adapted from here!
dinner is served! roast ginger soy chicken + garlic roast potatoes + roasted carrots + mushy peas.
 Sunday: dipping the shortbread in chocolate was a very good idea.

nachos for dinner! all we did was layer tortilla chips + hot tomato salsa + pickled jalapeno slices + grated Cheddar + dried oregano on a baking tray - bake at 200C for 10 minutes until the cheese has melted and the tortillas are crisp.
 Monday: baking with Nutella today!

I also baked a giant batch of brown butter chocolate chip cookies.
that, my friends, is whipped brown butter. and it smelt so good!
I like to use both dark and milk chocolate chips in my cookies - stops them from being too sweet.
the cookie dough went into the fridge to chill overnight.

for dinner, my Mum cooked the most delicious white lentil curry.
we ate it with roti - see her white lentil and lamb mince curry here!
 Tuesday: soft scrambled eggs with Cheddar + toast + ketchup before heading out for an injection!
back home and it was time to bake the cookies. I decided to stuff a few with cookie butter.
stuffed and ready to bake!
meanwhile, I made pastry and lined a flan dish.

whisked up a caramelised onion and Cheddar filling.

and baked this flan!
the cookies were done!
and yes! each of those chips on top were placed by hand! a little time consuming but it made the cookies look so cute!
the rest of the dough was rolled and frozen! I adapted this recipe.
in the evening, I prepped ingredients for the next day's cake. dark chocolate was melted for the icing.
the tins were greased and lined.
the icing was blended!
and sampled, of course.
finally, the dry ingredients were mixed!
 Wednesday: before breakfast, the cake was baked. softened butter was beaten with brown sugar and white sugar.
in went eggs, egg yolks, vanilla and buttermilk.
finally, the dry mix - gluten free self-raising flour + salt + cocoa powder + bicarbonate of soda + baking powder. batter formed and into bake!
once cooled, it was time to assemble. a layer of cake followed by the chocolate icing.
second layer and a little vanilla whipped cream.
finally, number three on top.
a crumb coat using the chocolate icing.
then, into the fridge for 30 minutes.
before the final layer of icing!

and sprinkles!
to make this cake, I doubled this chocolate cake recipe, swapped the plain flour for gluten-free self-raising flour and baked the cake in three 8 inch tins. ooh, and I put vanilla whipped cream between one of the layers!
Thursday: that moment when you realise the last Nutella cinnamon roll is in the fridge. I blasted it in the microwave for 30 seconds and it was divine!
my Mother mixed up a batch of lamb mince today.
she blended together:
1 Onion, roughly chopped
2 Green Chillies
2 teaspoons Ground Coriander
handful Fresh Coriander
juice of 1/2 Lemon
1/2 teaspoon Salt
1/2 teaspoon Crushed Red Chilli Flakes
1/4 teaspoon Black Pepper
2 teaspoons Cumin Seeds
once blended, the mixture was stirred into 1 pound Lamb Mince.
we let it rest for about 30 minutes.
before shaping into patties, frying and making burgers!
 Friday: for lunch today, we spread some of the lamb mince onto a naan and grilled it for 10-15 minutes until cooked.
 it was really good with a minty yoghurt dip!
