Homemade Deli Filler + Baked Tandoori Salmon + Egg and Chips: 1-7 August 2015.

how are you?
I hope you're well on this Sunday which is turning to be a pretty gloomy one here. isn't that how Sundays should be though? relaxed, maybe a little rain and of course, cake.

I'm eating anything but cake at the moment, having baked way too much of it this week. my snack of choice as I type this --> a giant bowl of chopped apple, tangerine, oranges, fresh orange juice and the sweetest melon ever. alhamdulillah for sweet fruit - we are very blessed indeed.
anyhoo, I hope you have a lovely day. on my agenda? chicken tikka masala with the cousins and a good old catch up. have a good one!

last weekend, I made my own cheese and onion deli filler to eat with baked potatoes (keep scrolling for the recipe). also, we've been attacked by the summer flu so chicken noodle soup was in order along with a brunch filled with potato pancakes and double chocolate banana bread.
so much baking this week. I baked these orange poppy seed scones along with flapjacks.
I also used up a box of frozen raspberries to bake a raspberry orange polenta cake. it was completely gluten-free too!
a giant batch of pesto was whizzed up after a basil harvest.

and, this baked tandoori salmon was so quick and easy to make. a definite new favourite --> keep scrolling for the recipe.
finally used my bundt tin to bake a sticky toffee pudding with toffee sauce. 
and, enjoyed a really simple but very satisfying dinner on Friday night with a caramelised onion and Cheddar omelette with chips.
why are the simple things always the best?

here's more from my week:

 lunch on Saturday and we were eating baked potatoes. I love having cheese and onion deli filler with them but we didn't have any so I decided to make my own. 
into a bowl went, grated cheese and mayo.
then, I squeezed in a little sweet onion relish.
gave everything a good stir.
threw in some chopped cherry tomatoes and spring onions.
seasoned everything with salt and pepper.
and, we're done!
hot baked potatoes were sliced in half, on went the filler and lunch was ready!
we seem to be suffering from summer colds round here at the moment so dinner had to be chicken noodle soup.
onions were browned. then, chicken on the bone was browned. in went garlic, ginger, carrots, more onion, a whole host of whole spices and seasoning.
in went water and the whole thing was simmered together until we had a delicious chicken stock.
the chicken was taken off the bone and shredded.
before being added to the stock along with noodles.
dinner was ready! just what we needed for summer colds aplenty. the recipe was adapted from here!
brunch on Sunday with stir-fried chicken, omelettes, spicy pickles and potato pancakes.
one of those meals that just hits the spot.

a Sunday isn't a Sunday without cake and thankfully we had half of this double chocolate banana bread in the freezer which I had baked back in Ramadan.
 Monday baking!

I baked a batch of these flapjacks.
next, I baked a batch of orange poppy seeds. into a bowl went sugar, orange zest, vanilla seeds.
after they were rubbed together, in went plain flour, poppy seeds, baking powder and salt.
cold butter was rubbed in and the whole dough came together with buttermilk and double cream.
ooh and I threw in a few raisins because we love them.
the scones were cut, placed onto a tray, brushed with double cream and sprinkled with demerara sugar.
time to bake!
these scones were so light with plenty of orange and vanilla. I adapted the recipe from here.
Tuesday baking! wow, I just realized that there has been a lot of baking round here this week. 
today I baked a raspberry and orange polenta cake. in this bowl, margarine, sugar, eggs, vanilla, polenta, ground almonds, baking powder and orange zest.
raspberries were stirred through.
the whole thing went into a cake tin. flaked almonds were sprinkled over the top.
the cake was baked until golden.
before being brushed with an orange syrup.

the basil is still taking over the house!

so I made a batch of pesto.

with fresh basil, garlic, lemon zest, lemon juice, salt, pepper and olive oil. I adapted this recipe.

baked tandoori salmon for dinner. place 2 pieces of salmon onto a baking tray.

I found this tandoori spice blend in the cupboard.

here's what was in it.

into a small bowl, mix together:
1 and 1/2 teaspoons tandoori spice blend
salt and pepper, to taste
zest of 1/2 lemon
a few tablespoons oil

finally, squeeze in the juice of 1/2 lemon.

give everything a good stir.

pour over the salmon.
 bake at 200C for 10 minutes until cooked through.
with it, we made a quick aloo gobi to which we added peas.
with more fresh lemon on the side, this was such a good dinner.

Wednesday baking!
finally got a chance to use my bundt tin which I got from here.
there were dates.
steeping tea.
dates soaking in the tea.
tins being buttered and floured.
a cinnamon, date and tea batter.
ready to bake!
plenty of butter to make a toffee sauce.
ready to flip!
and brushed with a buttery toffee sauce.
sprinkled with fleur de sel, and ready to eat!

 snacky Thursday with apples and oranges.
this for dinner with leftover aloo gobi.

chips ready to be fried on Friday.
I caramelised onions, grated Cheddar and sliced tomatoes.
omelettes were filled with them.
and, this was my fave dinner of the week!
