Eid-al-Fitr + Roti Quesadillas + Tuna Sweetcorn Crackers: 18-24 July 2015.

Assalamu alaikum wa rahmatullahi wa barakatuhu!

it's Sunday as I type this but I'm pretty sure I won't be posting until Monday at the very least.
after a slow start with spicy scrambled eggs and coffee, the day has sped up. there's a curry bubbling away on the hob, chicken marinading on the counter with fresh coriander, lemon slices and more and a double batch of this cake crumble baking in the second oven. it was transferred from the first, after the overflow of jam caused a slight burning problem. oops.
we began the weekend by celebrating Eid-al-Fitr. there were fresh samosas, roast chicken, boxes of methai and plenty of cake and Irn Bru.
the weekend continued with quesadillas galore. that's the best part about Eid - the leftovers. I used roti as the tortilla, tried refried beans for the first time and ate way too much tomato corn salsa.

with crispy, spicy salmon fishcakes for dinner, and my new fave, sweet potato fries.

the week continued with super spicy jerk chicken with rice and peas. I also revisited a student fave - tuna sweetcorn on crackers. still so good.
averted a fritter disaster on Friday by keeping calm and carrying on. was rewarded with sweetcorn spring onion pancakes and a new-found appreciation for all things sweet and spicy.

here's more from my week:

 Saturday morning! we celebrated Eid-al-Fitr today!
after a month of fasting, I think a box of methai at breakfast was definitely called for. my fave was that gulab jamun in the top left hand corner - the one without the coconut.
breakfast! how I missed you! on the plate, scrambled eggs, mashed potato and beans.
and, my first coffee after an entire month.
can I also say that the highlight of my day was getting to drink Irn Bru? I've been off the fizzy stuff for a while so this was a definite treat.
Eid lunch was a pile of freshly fried, steaming hot samosas.
Assembled the day before ...
... filled with a spicy lamb potato pea filling.
and, a few had grated Cheddar in them too which made them extra good.
I hope you all had a delicious Eid lunch too!
dinner was hours later after guests, sweet mango milkshake and making bouquets with weeds from the garden with my nieces.
more samosas, caramelised veg, mashed potatoes, spicy gravy ...
... and this roast chicken.
dessert? a gluten-free vanilla sponge with jam and sweet fondant. Eid Mubarak everyone!
 the day after Eid and what to do with those leftovers. I decided to make quesadillas.
I've never tried refried beans before so this was a first. they were really nice though - reminded me of hummus.
ready to assemble!
onto a homemade wholemeal tortilla, went a good spread of hot refried beans.
shredded Eid roast chicken.
plenty of grated Cheddar.
both sides of the tortillas were brushed with oil before being cooked in a hot pan.
sliced and ready to eat!

on the side, more hot refried beans.

my favourite tomato salsa with the addition of corn and more fresh lime.

a delicious lunch and a great way to use up leftovers.
oh, and fresh mango for pudding.
in the evening, we had the same thing. but this time, instead of using tortillas, I experimented and used two homemade rotis.
and, the result? no difference whatsoever. for me, roti is so much easier to use than tortillas. there's always a fresh batch of wholemeal rotis made in our house everyday, so I'll be using them more often.
dessert? this tropical swirl frozen yogurt.
snack on Monday afternoon - pears!
lunch consisted of bread + cold roast chicken + cucumber + tomato + avocado smashed with a little mayo, Sriracha, salt and pepper.
an open-faced sandwich did the job on a grey Monday afternoon.
salmon fishcakes for dinner. steamed salmon, cooked potatoes and a whole host of spices mixed together.
the breading station with beaten egg, breadcrumbs and flour.
into the pan they go ..
... cooked until golden brown.
steamed sweet potato wedges tossed with a little oil and tex-mex seasoning, and baked.
served up with steamed carrots and peas.
time to eat!
it felt oddly like a school dinner but I think that was what was so nice about it.
a curry cooked in our house today was keraylay - bitter gourd.
cooked with onions, tomatoes and plenty of spice.
Tuesday snack - a mixture of spicy nuts.
midweek and here's what we had for dinner. rice and peas with allspice, spring onions and kidney beans. 
heavily-spiced and aromatic fried and baked Jerk chicken. 
with a gravy made with the pan juices.
this was really delicious. Insha Allah, I can make it again sometime and share it with all of you.
 lunch on Thursday and I decided to revisit a student favourite: tuna sweetcorn crackers. you need tinned tuna, mayo, sweetcorn, crackers, salt and pepper.
drain the tuna and pop it into a bowl.
break it up with a fork.
add mayo, to taste.
give it a stir.
throw in as much sweetcorn as you like.
salt and pepper, to taste.
give it a stir - taste, and adjust seasoning, if needed.
chilli garlic sauce, because I can never resist.
grab your crackers and eat!
I prefer these cream crackers because they're sturdier. 
enjoy! this filling would be great in a sandwich too.
at lunch on Friday, there was tinned sweetcorn in the fridge and a few spring onions.
so, I decided to make sweetcorn fritters from this book.
however, I didn't have buttermilk or yoghurt to make some and subbed it for milk, making the batter runnier. I also didn't whisk the egg whites enough.
but I persevered and made them anyway. they turned into savoury pancakes.
and, were delish with maple syrup and chilli garlic sauce.
dinner prep: oil, chilli flakes, garlic.
fresh oregano. this stuff is amazing.
snacking on half the dish whilst the other half cooked.
olives! omg, who am I? still can't believe I actually ate them.
it's ready!
plenty of tomatoes.
oh, and pakoras.
a lovely end to the week. I hope you had a good one!
