Crack in two eggs.

Beat in the eggs.

Add six ounces (170 grams) self-raising flour.

Next, add the spices:
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon all spice

Stir well to combine.

Add a splash of milk.

Stir until creamy and well combined.

Finally, throw in four ounces (113 grams) mixed dried fruit.

Mix until just combined.

Place the mixture into the prepared tin.

Scatter with flaked almonds
Bake at Gas Mark 4 for 15 minutes or until cooked through.

Once baked, allow to cool in the tin.

  1. masha Allah looks like it's a tasty loaf yum baraka Allah ou fiji.

  2. I absolutely live from your website! I love the recipes I have tried from your website and usually they turn out amazing. However, the cake was definitely not cooked after 15 minutes. I had to keep taking it out and placing it back into the oven. I have to say though--the taste--as with most of the recipes I've tried from your website - was out of this world! Just stunning!
