Millionaire's Salted Caramel Shortbread

Assalamu alaikum wa rahmatullhi wa barakatuhu!



This recipe is for Millionaire's Salted Caramel Shortbread. They are layers of buttery shortbread, caramel and chocolate, and are perfect for special occasions because you can make them in advance! I must warn you though - they are quite addictive! 


A Simple List of Ingredients:

1. Plain Flour
2. Caster Sugar
3. Vanilla Pod
4. Unsalted Butter
5. Golden Syrup
6. Salt
7. Milk Chocolate

  
Bismillah, let's begin!

Preheat the oven to Gas Mark 4.


First, to make the shortbread, take eight ounces plain flour.



Add two ounces caster sugar.



Scrape out the seeds of a vanilla pod, and add to the bowl. You don't have to add it if you don't want to.



Cut six ounces of cold unsalted butter into cubes, and add to the bowl.



Rub the butter in with your fingertips until a crumbly mixture is formed. You could also use a food processor for this.



Place the mixture into a greased and lined square cake tin or oven dish.



Press the dough into the dish, and prick with a fork.
Bake in the preheated oven at Gas Mark 4 for five minutes, and then turn the oven down to Gas Mark 2, and bake for 35 minutes. 
Once baked, allow to cool completely. 



Next, make the caramel. Place seven ounces unsalted butter into a saucepan.



Add four tablespoons golden syrup.



Pour in a 397g can of condensed milk.



Finally, add one teaspoon of salt. If you want to make normal Millionaire's Shortbread, leave the salt out.
Place the saucepan onto the heat, and bring to the boil for 10 minutes.



Allow the caramel to cool slightly, then pour over the chilled shortbread. Chill in the fridge until the caramel has cooled and slightly hardened.



Then, melt twelve ounces of milk chocolate in the microwave, and spread over the chilled caramel.



Allow the chocolate to set.



Lift the shortbread out of the dish.



Cut into squares ..



.. and serve!




An easy way to serve these is to place each square into a paper cupcake case.
