Giant Strawberries and Cream Scone

Assalamu alaikum wa rahmatullahi wa barakatuhu!

This recipe is for Giant Strawberries and Cream Scone. I baked this for a summer afternoon tea a while back. It's the perfect recipe if you don't want to bake lots of small scones. Top with jam, whipped cream and strawberries and you're good to go!

A Simple List of Ingredients:

1. Self-Raising Flour
2. Baking Powder
3. Sugar
4. Frozen Butter
5. Milk
6. Lemon Juice
7. An Egg
8. Strawberry Jam
9. Double Cream
10. Strawberries

Bismillah, let's begin!

Preheat the oven to Gas Mark 7.

Place 8 ounces self-raising flour into a mixing bowl.

Add one teaspoon baking powder.

Add 2 ounces sugar.

Stir to combine.

Grate in 6 ounces frozen butter.


Add 150ml milk.

Add a tiny splash of lemon juice.


Tip the dough out onto a floured surface.

Bring the dough together until it's in a ball.

Take a round spring-form tin, and lightly grease it.

Throw in the dough.

Press the dough into the tin.

Brush with a beaten egg, and sprinkle liberally with sugar.
Bake in the preheated oven at Gas Mark 7 for 20 minutes until golden brown, and then allow to cool completely. 

Once completely, place onto a platter and spread with strawberry jam. Heat the jam for a few seconds to allow it to spread better.

Spread with whipped double cream - about 1 medium sized carton.

Slice a few handfuls of strawberries in half.

Decorate with the chopped strawberries.

And, serve! This scone requires tea and lots of good conversation!
