Rigatoni with Peppers

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Rigatoni with Peppers. It is a really simple pasta dish, and it's vegetarian. This dish is a perfect example that you don't need meat in a dish for it to be tasty. I think we've become so used to having meat and chicken at every meal that we now think a meal is not complete without it. Once in a while, a completely vegetarian meal is a refreshing change.
And, as the weather is so beautiful today, this dish is perfect for a summer evening meal!

A Simple List of Ingredients:

1. Red Bell Pepper
2. Green Bell Pepper
3. Onions
4. Olive Oil
5. Garlic
6. Salt and Pepper
7. Rigatoni
8. Olives
9. Vegetable Stock
10. Butter
11. Cheddar Cheese
12. Fresh Basil

Bismillah, let's begin!




Slice one red bell pepper into strips.




Slice one green bell pepper into strips.




Peel and thinly slice one onion.




Drizzle a few tablespoons olive oil into a large pan.




Add 2 peeled and sliced garlic cloves.




Heat the oil and garlic, and cook until the garlic is lightly golden.




Add the sliced peppers and onions.




Season well with salt and pepper.




Stir to combine.




Cover the pan, and cook for 30 minutes on a low heat.




While the peppers and onions are cooking, boil salted water for the pasta. Add about 2 mugs rigatoni to the boiling water, and boil until cooked.




Drain the rigatoni, and set aside.




After 30 minutes, the peppers and onions should be nicely softened.




Add 1 cup vegetable stock to the peppers, and allow it to reduce for 1 minute.




Add the cooked rigatoni.




Add a handful pitted olives, sliced in half.




Add 1 tablespoon butter.




Add as much grated Cheddar cheese as you want.




Tear in a handful of fresh basil leaves




Toss everything to combine, and heat through for a minute or two.




Serve straight away with more fresh basil leaves!
