Giant Triple Chocolate Cookies

Assalamu alaikum wa rahmatullahi wa barakatuhu!

This recipe is for Giant Triple Chocolate Cookies. I made these yesterday, and oh my days! If you're a chocolate lover, make these! If you know someone who is a chocolate lover, make these for them! If you want a great base for an ice cream sandwich, make these!
I'm just trying to give you any excuse to make these. They have such an intense chocolate flavour, it's unbelievable! I wouldn't usually recommend you eat raw cookie dough, but I tried some of it yesterday, and all I'm saying is when the raw batter tastes so good, you know the baked cookie is going to be even better!

A Simple List of Ingredients:

1. Plain Flour
2. Bicarbonate of Soda
3. Ground Cinnamon
4. Salt
5. Sugar
6. Brown Sugar
7. Cocoa Powder
8. Vanilla Flavouring
9. Margarine
10. Milk Chocolate
11. Eggs
12. Milk Chocolate Chips

Bismillah, let's bake!

Preheat the oven to Gas Mark 4.

Place 12 ounces (2 and 1/2 cups) plain flour into a bowl.

Add 1 teaspoon bicarbonate of soda.

Add 1/4 teaspoon ground cinnamon.

Add 1/4 teaspoon salt.

Mix to combine, and set aside.

Into the bowl of a mixer, place 4 ounces (1/2 cup) sugar.

Add 9 ounces (1 and 1/2 cup) brown sugar.

Add 3 ounces (2/3 cup) cocoa powder.

Add 1 teaspoon vanilla flavouring

Add 8 ounces (1 cup) softened margarine

Using the paddle attachment, mix together for a few minutes until creamy.

Take 3 ounces (1/2 cup) milk chocolate pieces, and heat in the microwave until melted.

Add the melted chocolate and 3 eggs to the mixture.

Mix for a few minutes until creamy.

Add the flour mixture from earlier.

Mix until just combined.

Add 1 packet milk chocolate chips.

Mix until just combined.

Place 1 tablespoon of the mixture in rounds on a greased and lined baking tray. I used an ice cream scoop.

Bake at Gas Mark 4 for 13 minutes.

Dig in! Place a scoop of vanilla ice cream between two warm cookies for the most amazing ice cream sandwich!
