Carrot and Coriander Soup

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Carrot and Coriander Soup. The weather here is beautiful but freezing, so soups are really popular in our house at the moment. This combination of carrot and coriander is a really simple but tasty option.

A Simple List of Ingredients:

1. Onion
2. Carrots
3. Vegetable Stock
4. Vegetable Oil
5. Salt and Pepper
6. Ground Coriander
7. Fresh Coriander

Bismillah, let's start!



First, peel and slice 6 carrots.




Peel and slice 1 onion.




In a large soup pot, heat a few tablespoons vegetable oil.




Add the sliced carrots and onion.




Cook for 4 minutes until softened.




Add 1 teaspoon ground coriander, and season well with salt and pepper.




Stir and cook for 1 minute.




Add 2 pints vegetable stock.




Bring to the boil.




Cover and simmer for 15 minutes until the vegetables are tender.




Blend the soup until smooth.




Add a large handful chopped fresh coriander to the soup, and heat through.




Serve hot with crusty bread!
