May 2022.

Assalamu alaikum wa rahmatullahi wa barakatuhu!

In the Name of Allah, Most Gracious, Most Merciful

Two years later and I'm back!

And I missed blogging! Not so much recipe posting because that was a lot of work but these monthly posts. So, I thought I would start with one of them. Mainly for myself but I'm really glad if you're here too. These are my highlights from May 2022. Let's do it!

We decided on biryani for Eid al-Fitr lunch. I used this recipe but got confused with the rice. It ended up that the rice used was jasmine and not basmati! Oops!

Eid gifts!

Somebody is two.

I killed another plant.

Getting back into reading with this book.

Craved salsa so made it.

The Eid week food celebration continued with a salmon lunch.

This is garlic butter creamed spinach salmon. It's one of my favourites and I use this recipe.

More gifts!

may you never forget all of the people you met who planted seeds of hope in your life when you least expected it.

Eid celebrations at work. This is a take on this recipe.

And all the pizza.

Such a blessing to be able to eat in daylight again.

My favourite flowers are blooming. These are rhododendrons. Had to definitely spellcheck that one!

Freshly squeezed grapefruit, lemon and tangerine juice. Delicious over ice.

I recently made my own kimchi using this recipe and thought I would put it to use in a pancake.

The batter is the easiest.

While the pancake cooked, I made a dipping sauce with soy sauce, green chilli, vinegar, sesame seeds, chilli flakes and chives.

The perfect rainy day treat! I used this recipe and added a grated potato to it.

I made this lemon pepper cajun chicken rigatoni alfredo for a Sunday night dinner.

I love these spring daisies!

My favourite tree.

Take a picture of my kulfi!

may this be the season of courageous pursuit: to fully enjoy the present moment right in front of you, no longer restrained by heavy mind and things to do, choosing to believe with total faith that today is worth a long and loving look.
