Spicy Potato Cheese Omelette.

It's a quick and easy recipe from me today!

In our house, especially at the weekend, we love spicy scrambled eggs and potato pancakes for breakfast.
When I came across today's recipe, I was so excited to try it because it brings together both of our favourite recipes into one.

We start by whisking up an omelette mixture with eggs, tomato, onion, fresh coriander, and chilli powder. You can also throw in other vegetables such as spinach or mushroom.
Then, in a frying pan we fry off some grated potato until golden. It's patted down into the base of the pan to create a pancake/rosti like bottom layer. 

The omelette mixture is poured over and allowed to set before finishing with cheese and chillies. The chillies melt into the cheese and we're ready to eat. You can change this omelette up in many different ways but I guarantee that it will become a go-to for a weekend breakfast or quick weeknight dinner. Plus try swapping the potato for sweet potato - I'm going to try that sometime myself!

A Simple List of Ingredients:
1. Eggs
2. Red Chilli Powder
3. Fresh Coriander
4. Tomato
5. Onion
6. Potato
7. Cheddar Cheese
8. Green Chilli
9. Red Chilli Flakes

Bismillah, let's begin!

Let's start by whisking up our omelette mixture.

I like to mix mine in a jug but a bowl will do too. Crack in 3 large Eggs.

Add Salt and Pepper, to taste.

Plus 1/4 teaspoon Red Chilli Powder.

Whisk well to combine.

Then, add in 2 tablespoons Fresh Coriander, finely chopped.

1 Tomato, deseeded and chopped

And, 1/2 Onion, peeled and chopped.

Whisk the vegetables in and set the mixture aside until needed.

Meanwhile, let's cook the base of the omelette which is grated potato. To a frying pan over medium heat, add a few tablespoons Vegetable Oil.

When the oil is hot, add in 1 large Potato, peeled and grated. There's no real weight here - basically you need enough grated potato to cover the base of your frying pan.

Season with a little Salt and Pepper.

Stir fry and cook for a few minutes until the potato is golden.

Then, use your spatula to press the potato down to cover the base of the pan.

Pour the omelette mixture over the potato.

Cover the pan with a lid and cook over the lowest heat for about 4-5 minutes or until the eggs have set.

The eggs have set when they're no longer wet on top.

Uncover and sprinkle on Grated Cheddar Cheese, to taste.

Finish with 1 thinly sliced Green Chilli and Red Chilli Flakes, to taste.

Cover with a lid for another 2 minutes or until the cheese has fully melted.

That's it! It's time to eat!

This omelette is great for any time of day. Today, I ate it for breakfast with tomato ketchup. On the side, a fruit salad and cold pineapple juice.

Plus it's naturally gluten-free for anyone who is intolerant! 😉

Prep Time: About 10 minutes.
Cook Time: About 10 minutes.
Serves: About 1-2 people.

Ingredients
3 large Eggs
Salt and Pepper, to taste
1/4 teaspoon Red Chilli Powder
2 tablespoons Fresh Coriander, finely chopped
1 Tomato, deseeded and chopped
1/2 Onion, peeled and chopped
Vegetable Oil, to cook
1 large Potato, peeled and grated
Grated Cheddar Cheese, to taste
1 Green Chilli, thinly sliced
Red Chilli Flakes, to taste

Whisk up the eggs:
In a jug or bowl, whisk together the eggs, salt, pepper, and red chilli powder. Add in the fresh coriander, tomato, and onion. Whisk and set aside until needed.

Cook the potato:
Heat a few tablespoons of vegetable oil in a frying pan over medium heat. Add the grated potato, salt, and pepper. Stir fry for a few minutes until the potatoes become a little golden. Then, use your spatula to press the potatoes over the base of the pan.

Cook the omelette:
Pour over the egg mixture. Cover the pan with a lid and cook over low heat for 4-5 minutes or until the eggs have set. Sprinkle over the grated cheese, green chillies, and red chilli flakes. Cover for 2 minutes or until the cheese has melted.

Serve:
Serve for breakfast or brunch!
