Easy Raspberry Dessert.

Today, I have for you a 4-ingredient 10-minute dessert.

Which is perfect for these hot days we've been having.
You know, the kind where you can't be bothered to bake but still want a sweet treat. This raspberry dessert is one that I tried a couple of months back. I was so intrigued by how the short both the ingredient list and method was.
I mean, all you do is mix together sour cream, vanilla and fresh raspberries. Pop it into an oven dish, sprinkle a load of dark brown sugar on top and grill (broil for the Americans) for up to 1 minute until the sugar caramelizes.

So I did just that. And, you guys. It was delicious. The cream raspberry mixture at the bottom is still cold because it hasn't been under the grill that long. But the sugar on top has been under the grill just long enough to get crispy and caramelized at the edges.
The three together made for the most wonderful combination. Sour cream and raspberries aren't traditionally the most sweet but with the thick layer of caramel brown sugar on top, they come to life. The original recipe suggested subbing the cream for thick Greek yoghurt which would make this dessert a wonderful breakfast or Sehri. 

A Simple List of Ingredients:
1. Sour Cream
2. Vanilla Essence
3. Raspberries
4. Soft Dark Brown Sugar

Bismillah, let's begin!

First job? Pre-heat your grill/broiler to high and grab a mixing bowl.

Into the bowl, place 300ml Sour Cream. Thick Greek yoghurt would also work really well here.

Add 1 teaspoon Vanilla Essence.

Stir it in. Another addition here, if you're in the mood, could be a little orange or lemon zest.

And, now the raspberries.

I used two of these 150g boxes.

These raspberries were grown in Spain and they were so big and beautiful.

Add 300g Raspberries to the bowl. You could also try this same recipe with strawberries.

Gently stir them in.

Before putting the whole mixture into an oven dish.

Finally, ingredient number 4. Take 140g Soft Dark Brown Sugar.

And, sprinkle it all over the raspberry mixture.

It will seem like a lot of sugar but I promise, it'll work out in the end.

To bake, pop the dish under the hot grill for between 30 seconds to 1 minute until ...

... the sugar has started to caramelize.

Whilst grilling, be sure to set a timer as you don't want the sugar to burn. Keep an eye on it as all grills can be different!

And, that's it! Time to serve.

And guys, what happens is that the cream and raspberries stay cold whilst the sugar gets crispy and melted on top. It's magic!

This dessert is best served straight away. After a while the sugar will start to dissolve on top. Still really tasty but not the best to look at.

Prep Time: About 5 minutes.
Bake Time: About 1 minute.
Serves: About 4 people.


300ml Sour Cream
1 teaspoon Vanilla Essence
300g Raspberries
140g Soft Dark Brown Sugar

So easy:
  • Pre-heat the grill/broiler to high.
  • In a bowl, gently stir together the sour cream, vanilla and raspberries.
  • Put them into an oven dish and sprinkle over the brown sugar.
  • Grill until the sugar just begins to caramelize - about 30 seconds to 1 minute. Keep an eye on it!
  • Serve immediately.
