April 2018: One Photo Everyday.

Assalamu alaikum wa rahmatullahi wa barakatuhu!

In the Name of Allah, Most Gracious, Most Merciful

It's May tomorrow! That means one thing and one thing only: Ramadan 2018 is coming!
But first, April. I hope you've had a good one.
We have had bouts of Spring sunshine along with plenty of cold Winter days. But the cherry blossoms have finally bloomed which can only mean good things. Up there by the way, is a double gluten-free batch of these pecan pie bars that I baked a few days ago. I highly recommend you give the recipe a go if you haven't already.


Here's my April 2018:

April 1: made a small batch of chocolate cornflake crispy cakes. hoping to share the recipe here at some point because they're easy to make!

April 2: typical bank holiday monday.

April 3: fried up a batch of lamb samosas to serve with green yoghurt chutney.

April 4: wanted cupcakes but couldn't be bothered to bake them.

April 5: citrus salsa for a sunny day.

April 6: biryani friday. I cooked this one!

April 7: remember two matters and forget two matters.

April 8: first one of the year.

April 9: made a crumble with apples and pears. the topping is this gingernut biscuit one.

April 10: love her Spring outfits.

April 11: chocolate cupcakes with orange buttercream.

April 12: I put brown butter into my cream cheese frosting and didn't regret it. the full recipe is here!


April 13: friday fish curry.


April 14: every time I make quesadillas, I wonder why I don't make quesadillas more often.


April 15: made one of our fave one-tray roasts even better with a radish raita on the side - grated small radishes + lime juice + greek yoghurt + fresh coriander + onion.


April 16: raided the deck for Spring flowers to compliment these carrot cupcakes.


April 17: leftover aloo gobi made the best filling for an aloo paratha.


April 18: freedom!


April 19: veggie rainbow, of sorts.


April 20: been loving making quick veggie pancakes for dinner this month.


April 21: finally tried cooking a Malaysian chicken curry with roti canai. it was good!


April 22: sunday cookie baking with peanut butter, oats and dark chocolate.


April 23: veggie stir-fry. by the way guys, I do not recommend the wok at all. after a few uses, the coating has started to peel off.


April 24: fish and veggie fingers for when we can't be bothered to cook.


April 25: got my cooking mojo back. made these fishcakes + this salad + this green sauce.


April 26: the most colourful dinner.


April 27: a double batch of these brown butter pecan pie bars.


April 28: weekend pizza.


April 29: classic veggie curry. full recipe is here!


April 30: this mornings omelette was spicy.
