Where would we be without sauces?
I mean, can you imagine chips without ketchup?
Or samosas without green yoghurt chutney? Yep, me neither.

I love discovering a new sauce or chutney recipe. This tomato mint green sauce is one I made in Ramadan by basically just throwing random things into a blender and praying for the best.
My prayer must have worked because the sauce was delicious. It comes together in 10 minutes, is no-cook and goes with everything. So far, we've eaten it with chips, spring rolls and pizza. But, my favourite by far was the meal above that we had for Iftar one night. It's smoky chicken tikka + kachumber salad + this sauce + green yoghurt chutney + wholemeal pitta. You must try it!
Sauces, previously: minty greek yoghurt // tahini yoghurt // white sauce // garlic sauce // red sauce
A Simple List of Ingredients:
1. Green Chilli
2. Garlic
3. Spring Onions
4. Salt
5. Crushed Red Chilli Flakes
6. Mint Concentrate
7. Tomato Ketchup
8. Fresh Coriander
9. Water
Bismillah, let's begin!
You guys know I am obsessed with my stick blender so that is what I used. You can also make this in a jug blender or food processor. Into a bowl, place 1 large Green / Red Chilli, roughly chopped.
Throw in 1 Garlic Clove, peeled.
2 Spring Onions, roughly chopped
1/2 teaspoon Salt
1/4 teaspoon Crushed Red Chilli Flakes
1 tablespoon Mint Concentrate. You can also use mint sauce.
Next, squeeze in 100 ml Tomato Ketchup.
Throw in a handful of Fresh Coriander.
And finally, pour in 100 ml Water.
That is it. All we do now is blend!
Until smooth!
And most important of all, taste! You can add more of any of the ingredients as you like.
Once you're happy with the sauce, pour into a serving dish and enjoy with anything and everything!
Here, we ate it with my peri peri chicken pizza. The best!

Tomato Mint Green Sauce.
Prep Time: About 10 minutes.
Cook Time: None.
Serves: About 6 people.
Ingredients

large Green / Red Chilli, roughly chopped

Salt

Crushed Red Chilli Flakes

100 ml
Tomato Ketchup
Handful
Fresh Coriander
100 ml
Water
Method
The
easiest!
Simply place all the ingredients into a food processor or blender. Blend until
smooth then taste. Adjust, if needed.
To
store, keep
in an airtight container in the fridge for a few days.
Enjoy! Enjoy with chips, samosas, pakoras, in wraps, burgers
– basically anything!
