Breakfast Tacos.

Assalamu alaikum wa rahmatullahi wa barakatuhu!

Re-named 'Sehri Tacos' because you know, Ramadan.

So guys, I feel like no one talks about Sehri. Everyone's always posting Iftar recipes or Iftar pictures on Instagram but poor Sehri is always left behind.


I am just as guilty too. So that is why, today we are talking Breakfast Tacos. They're the perfect meal for Sehri - tasty, quick and not too difficult for 2 AM when most of us are wandering around like zombies.

Quick question - what type of person are you at Sehri time? Grumpy, hyper or sleepy? As irritating as this may be for the rest of the family, I'm quite hyper and wide awake. Simply because, I stay awake all the way through until Fajr. For me, there is no point in having a snooze after Taraweeh because I'll probably end up missing Sehri altogether. And, we don't want to be doing that because the Prophet Muhammad (peace be upon him) mentioned, "Take Sehri, for in Sehri there is blessing".

One of my favourites at Sehri and breakfast throughout the year, are breakfast tacos. Eggs are scrambled with the simplest salsa and then covered with cheese. Once the cheese has melted, the whole lot is wrapped in soft tortillas and finished with a few squirts of chilli garlic sauce. Serve with a bowl of fruit and an iced coffee. So good! We love these for breakfast and sometimes even the laziest lunch or dinner. Enjoy!

Tacos, previously: chicken tacos // chimichurri fish tacos 

A Simple List of Ingredients:
1. Red Onion
2. Large Green Chilli
3. Tomato
4. Salt and Pepper
5. Eggs
6. Butter
7. Cheddar Cheese

8. Tortillas
9. Chilli Garlic Sauce

Bismillah, let's begin!


We start by making a quick salsa with an onion, a chilli and a tomato.


First, the onion. I used red but white will do too.


We'll only be using half so you can pop the other half in the fridge for something else.


Peel and dice the onion.


Like so!


Place into a bowl.


Next, take 1 large Green Chilli.


Slice in half and remove the seeds, if you wish.


Dice up.


Add to the diced onion.


Next, take a Tomato.


Slice it.


Then, dice it.


Add to the onion and chilli.


Sprinkle with Salt and Pepper, to taste. This is really important to bring out the flavour of the veggies.


Stir up and ...


... our quick salsa is done.

Next, take 4 large Eggs.


Crack them into a bowl.


Season with Salt and Pepper, to taste.


Grab a fork ...


.... and beat the eggs.


To cook the eggs, place 1 tablespoon Butter in a frying pan over a medium heat.


Once the butter has melted, pour in the beaten eggs.


Once the eggs are in ...


... throw in the quick salsa.


Stir to combine ...


... and scramble the eggs.


Until the eggs are cooked to your liking!


Next, take 100 grams Cheddar, grated.


Turn the heat off and sprinkle the Cheddar over the eggs.


Cover with a lid for a few minutes.


Until the cheese is melted!


Oh my gosh! It looks so good!


To make the tacos, take 4 medium Tortillas and Chilli Garlic Sauce.


To make one taco, take a tortilla. I made my own using this recipe but at Sehri time, will definitely be using ready-made.


Place on some of the eggs.


Grab the chilli garlic sauce.


Squirt it on!


Wrap up and enjoy!


We love our tacos with a fruit bowl.

Iced coffee!
And cold orange juice!
These tacos are one of my favourites. You can make them ahead and wrap in foil. Simply heat in the oven before eating!

Breakfast Tacos.

Prep Time: About 10 minutes.
Cook Time: About 5 minutes.
Serves: About 2 people.

Ingredients

For the Scrambled Eggs
½ Red Onion, peeled and diced
1 large Green Chilli, diced
1 Tomato, diced
Salt and Pepper, to taste
4 large Eggs
1 tablespoon Butter
100 grams Cheddar, grated

For the Tacos
4 medium Tortillas
Chilli Garlic Sauce

Method

To make the scrambled eggs, place the onion, green chilli and tomato into a bowl. Add salt and pepper, to taste and stir.
Crack the eggs into a separate bowl. Season with salt and pepper, to taste. Beat.
Place a frying pan over a medium heat and add the butter. Once melted, pour in the beaten eggs and add in the chopped vegetables. Scramble until cooked through.
Once cooked, turn off the heat. Sprinkle over the grated Cheddar and cover with a lid.
Once the Cheddar has melted, serve!

To make the tacos, heat the tortillas until soft. Take a warm tortilla and fill with the scrambled eggs. Squirt on chilli garlic sauce and wrap.


To serve, we like these tacos with iced coffee, cold orange juice and a bowl of fruit!
