Proper Snow + Mini Victoria Sandwiches + Citrus Bar Disaster:16-22 January 2016.

how are you?
can you believe that this time last week it was snowing here and now it's a much milder 12C?! what are you guys eating today? we are finally doing the Sunday thing and having a roast dinner. actually, it's leftover from yesterday but still! I feel like we always have a roast on any other day but a Sunday. one last thing, here is a Hadith that I read recently and loved:
The Prophet Muhammad (may the peace and blessings of Allah be upon him) said:
The best of you is the one who brings the most benefit to others.

Insha Allah, let us all try and benefit someone in a good way today. May I suggest baking them a batch of these?
the weekend began with cinnamon swirl bread, nachos and snow! proper snow! it fell all day Saturday.
and as we opened the curtains on Sunday morning, the view that greeted us was beautiful. I spent the day baking these mini Victoria sandwiches - they were gluten-free!

at the beginning of the week, I had the biggest disaster whilst baking citrus curd bars. alhamdulillah, at least I won't be making those same mistakes again.

towards the end of the week, we cooked so many biryanis, I've literally lost count of how many we made. also, there were the crispiest bhajis and proper homemade chips.

here's more from my week:

 Saturday: beginning the weekend with a toasted and buttered slice of my cinnamon currant bread.
making lunch!
and whilst I was doing so ...
... it began to snow!
the snow continued for hours until we were left with the most beautiful sight outside.
 Sunday: the world outside my window when I woke up.
The first fall of snow is not only an event, it is a magical event. You go to bed in one kind of world and wake up in another quite different.
and as with last year, when there is snow outside, we stay in and bake.
I made gluten-free cupcakes.
once they were baked, I took them out of their cases.
sliced them in half, sandwiched them back together with strawberry jam before finishing with a dollop of vanilla cream and sprinkles.

I used this recipe but used 3 large eggs instead of 3 medium. I also added in 1 teaspoon baking powder and used 1 teaspoon vanilla essence instead of extract. the cupcakes were amazing and were well received by all.
 Monday: so, the plan today was to make a citrus version of my lemon bars. I began with the base to which I added the zest of a lime.
whilst the base was baking, it was time for the citrus.
I used oranges, grapefruits, lemons and limes.
here is where I made a mistake - instead of whisking up a uncooked mixture as in my recipe, I went and made a cooked citrus curd.
I put in the juice of all the citrus mentioned above along with eggs, egg yolks, sugar and cornflour. it was cooked on the stove before being sieved. then, I whisked in butter and coconut oil.
the curd tasted amazing, the base was crisp and fragrant, time to put the two together. what could possibly go wrong?

this! after baking in the oven, I took the tin out. the base was way overcooked and really crispy plus burnt at the edges. the curd, although delicious, had not set at all. 
I have only myself to blame because I put together two recipes when I should've just stuck to one. they were this one and this one.
meanwhile, things were going much better for my Mother.
she had cooked a giant chicken curry which she finished with dried fenugreek and fresh jalapenos.
 Tuesday: onions peeled.
and sliced!
you guys, this picture reminds me of when I was younger, I could not stand coriander stalks. now, I love them! it's where all the flavour is.

later, a quick biryani.
Wednesday: the leftover biryani made the best quick dinner.
Thursday: more biryani!

Friday: I defrosted some vegetarian dumplings for dinner today - they decided to break up!

alhamdulillah though, after a spell in a hot pan.

they were crispy, delicious and just fine.
 to end the week, proper chips!
you cannot beat them!
