Jammy Hearts + Chicken Pie + Cinnamon Swirls: 9-15 January 2016.

Assalamu alaikum wa rahmatullahi wa barakatuhu!

how are you all?
is it snowing where you are because it is here, and I am so happy! I love the snow - it's so nice to look at and unlike hammering rain, is really peaceful. I have started with a quote about Umar (ra) because I am currently reading this book and because of it, have learnt so much more about the second khalifa of Islam than I knew before. I particularly like how even before Islam, he was one of the wisest and most respected men in Makkah. That fact alone makes more sense when you read the following saying of the Prophet (saw).

It is related by Abu  Hurairah (ra) that the Prophet Muhammad (saw) said:
You will find people to be like mines. The best of them in the Jahiliyyah (ignorance before Islam) are the best of them in Islam when they have understanding.
{Sahih Al-Bukhari}

Umar (ra) lived during the Jahiliyah (period of ignorance before Islam) and knew it inside out. He knew its true nature, its customs and traditions and defended it with all the strength he possessed. Hence, when he entered into Islam, he understood its beauty and true nature, and he understood the great difference between guidance and misguidance, disbelief and faith, truth and falsehood, and he (ra) spoke the famous words:
The bonds of Islam will be undone one by one when there will be a generation brought up in Islam who do not know what Jahiliyah is.

the weekend was a sweet one here - I baked a double batch of chocolate brownies and a gf Victoria sandwich with plenty of vanilla whipped cream. on Monday, I baked this orange vanilla sponge heart and then proceeded to slather it with raspberry jam.

the week continued with the best chicken pie, a crumble filled with rhubarb, cherries and lots of seeds, not to mention pasta salads and puffy tortillas.

by Thursday, a little bread baking was much needed to calm everything down. along with a little deep-frying since it has been so cold here! we're talking deep frosts with my favourite, clear blue-skied days.

Saturday: I baked a giant double batch of these quadruple chocolate brownies today.
although they were just triple chocolate because I forgot the white chocolate and they did not last long! the gooey middle ones are always the best!
I also baked a gluten-free Victoria sandwich with added whipped cream.
savoury wise, I baked chilli ginger salmon.
Sunday: the leftover baked salmon made the best spicy salmon and potato fishcakes.
Sunday coffee with brownies + crisps.
Monday: time to bake!
I whipped up a simple orange vanilla batter.
popped it into this heart-shaped tin.
and, spread it with raspberry jam.

I sprinkled half with toasted coconut and left the other half plain for me!
for dinner, I cooked chicken with a coriander lime sauce.
I adapted it from this recipe.
it was the best with leftover fried rice and Mum's chicken mince curry.
Tuesday: with the leftover chicken, I baked a chicken pie.
vegetables were chopped.
a sauce was made.
to which cooked chicken, carrots and peas were added.
the pie filling is ready!
it went into a pie dish.

and was covered with my new favourite pastry.

also happening today, a crumble!

... plenty of roasted seeds.
time to bake!

I don't know about you guys but I am definitely a vanilla ice cream girl when it comes to crumbles.
finally, a quick pasta salad.
 Wednesday: making salsa!
that moment when there's a tiny pepper inside!
shock horror! I actually enjoyed these peppers even though I'm not really a green pepper fan. 
when your tortilla puffs up on its own!
a plate of all the good things. 
Thursday: baking a loaf of bread or two.
when baking bread, always make sure the yeast is not out of date. I learnt this the hard way.
dough done and ready to rise!
time to slice my pineapple.
eaten with dark brown sugar, allspice and lime juice.
for dinner, we fried bhajis.

and, spicy fish pakoras.
after dinner, the dough had risen beautifully.
it was ready to be filled.
and left to rise again overnight.
 Friday: fresh bread at breakfast.

finally, a savoury plait that I cannot wait to share with you!

nachos + baking bakewells + homemade pastry

lately, on the blog:
 cooking saag + pancake wraps + citrus juice

 keema curry with green beans + jalapenos

mocha marble cake with coffee buttercream


Because of all the snow, this dua came to mind:
O Allah, wash away my sins with snow and hail water and purify my heart of sins as a white garment is cleansed of soil. And distance my sins as far away from me as You have distanced the east from the west.
