Spring Snow + Soda Bread + Mother's Quiche: 28 February - 6 March 2015.

Assalamu alaikum wa rahmatullahi wa barakatuhu!

In the Name of Allah, Most Gracious, Most Merciful

This week, I have finally got my hands on a few rolls of washi tape and let's just say, I've been putting it everywhere.

I have also mistakenly eaten a whole roast garlic clove thinking it was a potato wedge. Don't ask.  
Weather wise, we have had it all. Snow, blazing sunshine, grey clouds and blue skies.
 And, I have perfected the chocolate cake. Keep an eye out for it.

This week, the highlight has definitely been catching up with old friends and family. I think a catch up with them is also a catch up with myself, if that makes sense. Having a long chat over tea or on the phone can be really therapeutic. And, you are maintaining the ties of kinship!
So, this week, I urge you to make time and get in touch with someone you haven't spoken to in ages. Go! Now! And do it! You won't regret it.

Saturday: Hadith of the day.
 Sunday: Food from today included Spicy Fish Pakoras - a similar recipe can be found here.
Chicken Tikka
Rice with chicken and lentils
And, a chicken, chickpea and potato curry.
Monday: What?! Snow? But it's supposed to be March.
Snow outside and a busy weekend before made it the perfect day to bake.
I tested a recipe for chocolate cake which I cannot wait to share with you. Keep your eyeballs open for it!

Dinner was chicken with lentils, rosemary and garlic.

And, sesame-roasted carrots.
So yummy - a really warming dish because Spring hasn't actually arrived yet here. The recipe was adapted from here.

But the real highlight of dinner was dessert. Duh.
Tuesday: Such a busy day in which strawberries were snacked on.
Wednesday: Time to bake!
This time, a fruity soda bread ready for breakfast the next day. Because I'm organised like that.
It was so quick to make and doesn't involve any yeast or proving time. But still tastes like bread!

At dinner, I made potato wedges with rosemary and garlic.
Omg. These were so good roasted until super crispy.
We ate them with mushy peas and coriander and lime crusted fish. A random take on fish and chips, if you will.
 Thursday: Breakfast was ready and waiting this morning.
Perfect with just a little butter and a coffee.
My Mother made a veggie quiche. It was so good. She put in asparagus, courgettes, a bell pepper, spring onions and fennel.
It was nice to have fennel again. Not eaten it since last July.
Anyway, first Mother made a homemade pastry.

And, she lined a tart tin with it.
Then, she cooked the veg with a little spice.

Meanwhile, I made strawberry jam. As you do.

The last time I made strawberry jam was in August. This time, I used this recipe. I have to be honest though, it wasn't as good as last time and was too sweet.
Anyhoo, back to the quiche. By now, the veggies had been cooled and were joined in the tin with a mixture of eggs, cheese, milk and seasoning.
A final garnish with asparagus, and it was ready to bake.
Meanwhile, we made more of those potato wedges from yesterday because they were so good!
And, by then, the quiche was done! I'll try and get my Mother to re-create the recipe for you guys - it was that good!
Friday: Omg. Today felt like Spring. At last. There were blue skies, plenty of sunshine especially that warm afternoon glow. So pretty!
Random lunch: Cold quiche with salami.
For dinner, I made noodles. I prepped the veg beforehand - an onion, bell pepper, green chilli, a carrot and ginger.
Seriously guys. Cutting everything before starting to cook was a lifesaver. I should definitely do more often.
Anyway, the noodles were cooked and were finished off with a beaten egg, similar to egg fried rice.
Super yummy but very spicy (oops). A delicious end to a v.busy week.
