This is my kind of weeknight cooking.
The super-quick, ten ingredient, still tastes like curry and gives you that spicy, citrusy, herby kick to get you through to the weekend kind.
Sound good? Then, I give to you this recipe for Green Masala Minced Chicken. All you do is brown onions with ginger and garlic. Then, in goes chicken mince which is browned. Finally, green chillies (for spice), ground turmeric (for colour), salt (because, salt), lemon juice (for a citrus kick) and fresh coriander (for herby goodness) are added.
The whole thing is simmered for around 15 minutes whilst you get your flatbread (roti for us), salad (cucumber, cherry tom) and chutney (green yogurt) ready. And, with that, dinner is served!

Bismillah, let's begin!
Place a pan or wok over a medium heat and add 4 tablespoons Vegetable Oil. Once the oil is hot, add 2 medium Onions, peeled and finely chopped.
Fry the onions for about 6 minutes until soft and light brown.
Next, grab ginger paste and garlic paste.
Add in 1 teaspoon Ginger Paste and 1 teaspoon Garlic Paste.
Fry for around 3 minutes.
Next, add in 1 and 1/2 pounds (680 grams) Chicken Mince.
Stir-fry over a medium-high heat until the chicken is white and no longer pink.
Then, add:
1 teaspoon Salt (or to taste)
4-6 hot Green Chillies, finely sliced
1/2 teaspoon Ground Turmeric
Juice of 1/2 Lemon (about 3 tablespoons)
Small handful Fresh Coriander, chopped
Stir well for 2 minutes.
Then, turn the heat to low and simmer, covered, for 15-20 minutes.
And, it's done! Be sure to taste though, and see if it needs more salt or more lemon juice.
Lemon juice is awesome in this. We served it alongside this veggie curry.

Method
Place a frying pan or wok over a medium
heat and add the vegetable oil. When it’s hot, add in the onions and fry for

Throw in the chicken mince and stir-fry
over a medium-high heat until the chicken turns white and is no longer pink.
Then, add salt, green chillies, ground
turmeric, lemon juice and fresh coriander. Stir well for 2 minutes.
Finally, bring the heat down to low, cover
and simmer for 15-20 minutes.
Serve with flatbreads, salad and plenty of
green yoghurt chutney. Enjoy!
