Samosa Weekend + Spontaneous Bakes + Brown Butter Mash: 13 December - 19 December 2014

 Saturday: I made another batch of Coconut Ice today.
This time, I used a purple food colouring.
I also flavoured it with vanilla.
The weather was dark and cold so we decided to rustle up a batch of samosas.
Mum made the samosa pastry.
And, a chicken filling with potatoes and peas.
I think it's good to take out the time now and again to make these traditional recipes from scratch.
Once filled, they were fried to crispy, golden brown perfection and eaten with this chutneythis sauce and this drink.
Sunday: Another wet and dark Sunday afternoon.
 Monday: My favourite salami ready to be used in a lunch dish.
The dish was delicious, filling and used up leftovers - what more can you ask from a lunch dish? I'll be sharing the recipe soon Insha Allah.

How beautiful is this?
This case contained the tiniest Quran I have ever seen.
We may need a magnifying glass to read it though.
I did a spot of spontaneous baking in the late afternoon, and of course, snapped a few photos. First, I separated a few eggs.
I added sugar to the egg yolks.
And, gave them a whisk.
Then, I melted dark chocolate.
And, whisked that in too.
Then, I grabbed my electric whisk.
And, whisked my egg whites to stiff peaks.
I whisked in a sprinkle of ground cinnamon.
I whisked in 1/3 of the egg whites.
And, then folded in 2/3 of the remaining egg whites.
I buttered and sugared a baking dish, and placed it into an oven tray.
In went the chocolate batter.
I poured in boiling water into the larger tray, and baked for about 30 minutes in a 180C oven.





After a dusting of icing sugar, my spontaneous bake of this Chocolate Pudding Cake was done. It reminded me of this pudding which I baked back in February 2013.

For dinner, I made this recipe ...

Instead of using fresh spinach like the recipe, I used spinach pesto and a few extra ground spices.
I grilled the fish just like the recipe said, and it was really good. A very simple and satisfying meal!
For dessert, the chocolate pudding from earlier with a little sea salt.
Tuesday: More spontaneous baking today with these oatmeal raisin cookies for guests.
I also baked another breakfast crumble today.

But, this time, I made my own granola to top it. I'll be sharing both recipes soon! :)

For dinner, Roast Chicken with Olives and Grapes. Salty, sweet and very moreish.
 Wednesday: One of my favourite snacks - crackers with Cheddar and Branston pickle.
I baked the breakfast crumble today, topped with my homemade granola.
The perfect winter breakfast, dessert or snack!
Thursday: More seasonal baking today.

Today, I cooked another recipe from one of my current favourite cookbooks.
I made an intense tomato glaze.
A batch of brown butter mashed potatoes - words cannot describe how good these were.
Giant meatballs were brushed with the glaze ..
.. and baked off in the oven.
And, served over the mashed potatoes with peas and sweetcorn.
 Friday: This morning, it was so calm outside.
I say calm because we have had non-stop heavy rain here for the past few days. So a little quieter weather was much appreciated.
My breakfast apple crumble for breakfast. I prefer it plain but you could also pour on milk, cream or custard. The recipe is coming soon, Insha Allah!

This made my day today. A lovely reader shared a photo on Instagram of my chocolate fudge cake.
