Orange Salads + Roast Chicken + Beautiful Buttercream: 13 September - 19 September 2014

A few recipes that I have bookmarked from around the web this week:
these cupcakes!
- and these poppers!

 Saturday: Ingredients out for a spot of weekend baking - apple season is well and truly here. 
For dinner, I made salmon. But first, a Firecracker Stir-Fry from this book.
I heated up 2 tablespoons Sesame Oil in a pan.
Once the oil was hot, in went 6 Sweet Peppers, sliced
Along with a few sliced Spring Onions.
To add heat, 3 Green Chillies, sliced. Stir fry for 2 minutes on a high heat.
Next, a whole bag of Baby Spinach, roughly chopped.
In the spinach goes.
Wash a handful of Cherry Tomatoes.
And, throw them in.

Season with a few tablespoons of Soy Sauce, Salt and Black Pepper.
Stir-fry on a high heat until the spinach has wilted and it's ready!
To serve along side it, I roasted potatoes with olive oil, salt and pepper.
And, then the salmon fillets marinaded in salt, red chilli powder, ground coriander, ground cumin, lemon juice and basar masala.
Once the potatoes are half roasted, add the salmon pieces and roast until everything is cooked. Mine was 15 minutes on a high heat. The recipe I kind of used is here.
 Sunday: Weekend breakfast of the usual.
My bake for European Cake Week was cooled and ready to use.
Spread with melted chocolate and topped with softened apples - the full recipe is here.
 Monday: After seeing this recipe, I craved Chicken Tikka.
Mum made it for me.
And, we ate it with plenty of mint yoghurt, cucumber, tomato and lettuce.
Tuesday: I love dinners that can be made ahead of time and then just popped into the oven. 
This was one such dinner.

A lasagna filled with lamb, beans and spinach.

Baked to perfection in the oven - I'll be sharing the recipe v.soon!

Chicken avocado sandwich thin with cucumber and tomato for lunch!
 Wednesday: Have any of you ever been faced with a tin full of broken biscuits? 
If so, then you have got to make a tray of these. I used most of the same ingredients but added in raisins, roasted hazelnuts and linseeds.
This recipe just melted the dark chocolate, golden syrup, butter and a pinch of salt in a pan.
(Another block of butter softening behind the pan for another recipe).
Combined the melted chocolate with the biscuits and nuts.
And, pressed the whole thing into a deep square tin. Freeze or place in the fridge, slice and munch!
On Wednesday, I also began a recipe that turned a favourite dessert of mine into cupcake form.
Starting out with a toffee sauce :)
I also baked my dad one of his favourites.
For lunch, we had chilli rice cakes with cheese, and my favourite, pickled jalapenos!
Followed by Middle Eastern Oranges.
Sliced oranges scattered with pomegranate seeds and drizzled with a sauce made from orange juice, rose water, honey and cinnamon.

Here's the recipe - it's from one of my favourite cook books! And, I only wish that my pomegranate seeds had been as ruby red!
Thursday: A very familiar sight around these parts!
 The cupcakes were well underway. 
But everything must stop for lunch which today was sandwich thins topped with keema and Cheddar with cucumber, toms and lettuce drizzled with balsamic glaze.
 My mum was casually throwing a whole roast chicken into the oven for dinner. It was marinated in yoghurt, red chilli powder, lemon juice, garlic paste, ginger paste, curry powder, tandoori masala, dried fenugreek and salt. Under it was a bed of sliced potatoes, red onions and fresh lemons.
It was an adaptation of this recipe.
Why is freshly whipped buttercream so pretty?
 Cupcakes were ready! Just a final grating of dark chocolate and it was time for them to face the world!

Remember that chicken?
Well, it was really moist and juicy. A lovely one-pot weeknight meal!
Friday: Not wanting to waste leftover toffee or leave my gluten-free aunt and cousin out ..
 ... I baked Mini Banana Bread Cupcakes halving this recipe.
Piped freshly whipped cream over them all and drizzled with more toffee sauce!
Sometimes on a gloomy Friday afternoon in September, only potato waffles, battered fish and beans will do. Don't judge - I know you guys agree! (Speaking of waffles, you may be seeing a whole lot more of them around here soon, and I don't mean the frozen kind!)
