And, what are your thoughts about a barbecue? Pretty positive I should think, considering the beautiful weather we had here last week. The scorching sunshine didn't last though, and we are back to rolling, grey clouds and rain spattered windows.
To keep the spirit of May well and truly alive, combine both a pizza and a barbecue together in the comfort of your dry and warm kitchen. I made this BBQ Chicken Pizza in April and have been meaning to share it with you ever since.

To keep the spirit of May well and truly alive, combine both a pizza and a barbecue together in the comfort of your dry and warm kitchen. I made this BBQ Chicken Pizza in April and have been meaning to share it with you ever since.
It's such an easy meal to put together and uses only a few ingredients, which is perfect for a Friday night dinner after a busy week filled with work. Chicken tossed with sweet, spicy and smoky barbecue sauce, topped with tart red onion slices and tangy, pickled jalapeno, all under a mountain of melted, gooey Mozzarella cheese. Does anything sound better?

To make this pizza, all you need is Barbecue Sauce, Cooked Chicken, Red Onion, Pickled Jalapeno, Pizza Base and Grated Mozzarella.
Bismillah, let's begin!
First, get your oven heated up to Gas Mark 7 or 220 degrees.
Then, grab some pizza dough. You can use a ready made pizza base which would make dinner appear a lot faster. I used one batch of my Fresh Pizza Dough.
Place it onto a floured surface.
And, roll! Roll out to fit your pizza tray.
Here's mine! Set aside to work on the topping.
Cook up 1 pound of Boneless Chicken Pieces. I boiled mine but you could roast, steam or pan-fry, whatever is easiest!
Next, the barbecue sauce. Use shop bough or make it homemade which I did using this Barbecue Sauce recipe. It's really easy and uses ingredients that I bet you already have in the cupboard.
Shred the chicken and add them to the sauce.
Stir in well, and then taste for seasoning.
Now, grab the rest of your ingredients. From the fridge, get out the Pickled Jalapeno Slices. I love these - I could eat them with anything!
Then, peel and thinly slice a Red Onion.
Finally, take some Grated Mozzarella.
We're ready!
Spread the chicken mixture onto the base.
Top with the red onion - which should be called purple onion, don't you think?
And, then the jalapeno slices.
And, finally the grated Mozzarella.
Place the pizza into the hot oven to bake ..
.. for about 20 minutes or until golden brown and bubbling.
Slice and serve immediately! Try not to burn yourself when eating!
Btw, feel free to add anything else to the pizza that you like.

Chicken Pizza

Ingredients
– cuts into 8 slices
1 batch of Pizza
Dough, homemade or a shop bought base
Barbecue Sauce,
to taste (homemade or shop bought)
1 pound Boneless
Chicken Pieces, cooked and shredded
Red Onion,
peeled and thinly sliced, to taste
Pickled Sliced
Green Jalapenos, to taste
Grated
Mozzarella, to taste
Method
Preheat the oven
to Gas Mark 7 or 220 degrees.
Roll out the
pizza dough and place onto a pizza tray.
Mix the cooked
chicken with the barbecue sauce.
Spread it onto
the pizza base.
Top with the red
onion, pickled jalapeno and grated mozzarella.
Bake in the hot
oven for about 20 minutes or until golden brown all over.
Slice and serve
up!
