So, as promised after I posted the Barbecue Sauce recipe on Friday, here is the recipe in which I used it - Barbecue Chicken Sandwiches. These are full of flavour and perfect served with fresh coleslaw and a cold drink!
A Simple List of Ingredients:
1. Boneless Chicken Pieces
2. Red Chilli Powder
3. Paprika
4. Garlic Powder
5. Onion
6. Water
7. Vegetable Oil
8. Homemade Barbecue Sauce
9. Salt and Pepper
10. Sandwich Buns
Bismillah, let's begin!
Take 1 pound of Boneless Chicken Pieces. You could use chicken thigh pieces too, if you're that way inclined.
Then, take:
1 teaspoon of Red Chilli Powder
1 teaspoon of Paprika
1 teaspoon of Garlic Powder
Add the spices to the chicken, and season with salt and pepper, to taste.
Mix well.
In a large saucepan, heat 2 tablespoons of Vegetable Oil.
Once the oil is hot, add the chicken.
Cook in a single layer until ..
.. golden brown. They don't have to be fully cooked through at this point.
To the same pan, add the sliced onion.
Cook the onions until softened.
Add 1/2 glass of Water.
Cover with a lid for 1 minute.
Uncover and ..
.. add the chicken pieces back in.
Stir them in ..
Cover for 15 minutes on a low heat
until the chicken is fully cooked through.
Remove the chicken from the pan
to a plate.
Once cool enough to handle, shred or chop into small pieces.
Add it back to the pan.
Next, take 1 cup of Homemade Barbecue Sauce.
Add to the pan.
Heat through for about 10 minutes.
To serve, slice a sandwich bun in two and toast it under the grill.
Place some of the chicken onto one side.
You could add some coleslaw on top, but I prefer mine plain. Serve immediately!
