This recipe isn't really a recipe - more an idea! It is an Easy Focaccia Pizza. Nowadays, there are many different varieties of breads available on the supermarket shelves, and the Italian focaccia is one of them. Use it as the base for a simple and quick grilled pizza. I just used the classic toppings of tomatoes, mozzarella and basil, but you could use anything you like - leftover grilled or roast chicken or veggies - anything goes!

Preheat the grill to high.

Preheat the grill to high.
Take two slices of focaccia bread, and place onto an oven tray. Follow the packet instructions in case you need to pre-cook them.
Spread on a few tablespoons of tomato passata.
Sprinkle on some grated Mozzarella cheese.
Finally, add a few torn leaves of fresh basil.
Place under the hot grill until golden brown. Serve immediately!

Focaccia Pizza
Ingredients
· 2
pieces of Focaccia Bread
· Few tablespoons
of Tomato Passata
· Handful
of Mozzarella Cheese, grated
· Handful
of Fresh Basil Leaves
Method
1. Preheat
the grill to high.
2. Place the
focaccia onto an oven tray. Follow the packet instructions because it may need to be pre-cooked. Then, spread on some of the passata.
3. Top
with as much mozzarella cheese as you want. Tear half the basil leaves and
place onto the cheese.
4. Place the
pizzas into the hot grill, and cook for about 5-7 minutes, until the cheese is
melted and golden brown.
5. Remove from
the grill and garnish with the rest of the basil leaves. Serve immediately!
