Cinnamon Apple Muffins

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Cinnamon Apple Muffins. Autumn or maybe even winter, is well and truly here, and nothing tastes more like autumn than cinnamon and apples. Place the two into these muffins, top with an crumbly oat topping and you have a perfect treat with that hot tea or coffee!
This recipe makes nine muffins.


A Simple List of Ingredients:

1. Butter
2. White Sugar
3. Eggs
4. Apples
5. An Orange
6. Ground Cinnamon
7. Salt
8. Baking Powder
9. Plain Flour
10. Brown Sugar
11. Flaked Almonds
12. Rolled Oats


Bismillah, let's bake!

Preheat the oven to Gas Mark 5.


First, place two ounces (56 grams) softened butter into a mixing bowl.



Next, add four ounces (113 grams) white sugar.



Beat the butter and sugar together until creamy and combined.



Crack in two eggs.



Whisk the eggs in.



Next, take two apples. I used a Royal Gala apple and a Granny Smith apple but you can use any kind.



Peel and grate the apples, and add to the bowl.



Add the zest of one orange.



Stir to combine.



Next, add:
1/4 teaspoon salt
One teaspoon baking powder
1 and 1/2 teaspoon ground cinnamon



Finally, add twelve ounces plain flour.



Stir until just combined. Add a drop of milk if the batter is too thick.



Spoon the batter into muffin cases, and set aside whilst you make the crumble topping. You don't have to add the topping but I think it adds a good texture to the muffin.



For the crumble topping, take two ounces (56 grams) white sugar.



Add two ounces (56 grams) brown sugar.



Throw in two tablespoons plain flour.



Add 1/4 teaspoon ground cinnamon.



Mix well.



Now, add three ounces (85 grams) cold cubed butter.



Press the butter in with your fingertips.



Add three tablespoons flaked almonds, or any other nuts you like.



Finally, add a handful of rolled oats, and mix well.



Sprinkle the mixture as evenly as possible over the batter.



Bake at Gas Mark 5 for 20 minutes or until fully cooked through.



Allow to cool, and then serve for a crunchy autumn treat!
