Smashed Potatoes

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Smashed Potatoes. It's a great alternative to other traditional potato side dishes like Hash Browns and Stuffed Potato Skins. The method is really simple, and then you can top them with any herbs or seasonings that you want!
This recipe makes 12 smashed potatoes.

 A Simple List of Ingredients:

1. Potatoes
2. Fresh Rosemary
3. Olive Oil
4. Salt and Pepper

Bismillah, let's begin!


Cook twelve medium unpeeled potatoes in a large pan of salted boiling water until tender.




Once cooked, drain.



Place the potatoes on an oven tray which has been brushed with a little olive oil.



Now, the fun part! Take a potato masher, and smash the potatoes right down. You may have to rotate the potatoes to smash them at all angles!



Brush the potatoes with olive oil.




Sprinkle plenty of salt and pepper onto each potato. Here, you could also any other seasoning or spices you like - maybe some crushed chilli flakes or ground cumin?



Next, take a handful of fresh rosemary. You could use any other fresh or dried herbs here too.



Finely chop the rosemary.



Sprinkle a little chopped rosemary onto each potato.




Bake the potatoes in a preheated oven at Gas Mark 8 for about 20 minutes or until golden brown and crispy.
