Zesty Butter Cookies

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Zesty Butter Cookies. My mother loves any kind of citrus fruit, and so she loved these cookies. What we have is a crumbly butter cookie flavoured with orange, lemon and lime zest, and then drizzled with the most amazing citrus glaze. These cookies are really refreshing and light, and make a welcome change from the regular tea time biscuit!

A Simple List of Ingredients:


1. Plain Flour
2. Caster Sugar
3. Butter
4. An Egg
5. Oranges
6. Limes
7. Lemon Juice
8. Icing Sugar
9. Milk 

Bismillah, let's bake!

Preheat the oven to Gas Mark 4.


Place 4 ounces softened butter into a mixer bowl.



Add 4 ounces caster sugar. You could use normal sugar too.



Attach the paddle attachment.



Beat on medium speed for a few minutes until creamy.



Crack one egg, and separate the whites from the yolks. Add the yolk to the mixer.



Mix until combined.



Next, take the zest of one orange ..



.. add to the bowl.



Then, zest one lime .. 



.. and add to the bowl.



Add one tablespoon lemon juice. If you have fresh lemons, add the zest as well.



Add one tablespoon orange juice.



And, one tablespoon lime juice.



Thrown in 6 ounces plain flour.



Mix until just combined.



Grease and line a large baking tray, and take a mini ice cream scoop. You could also make these cookies bigger, if you want.



Bake the cookies in the preheated oven at Gas Mark 4 for about 13 minutes.




Another quick note/tip, is that to get the same size cookies or biscuits, use an ice cream scoop. You can get them everywhere these days, and they're a really good tool in the kitchen.



Once baked, allow the cookies to cool completely.



Next, to make the icing, take 8 ounces icing sugar.



Add 2 tablespoons milk.



Add a few tablespoons orange juice.



Whisk the icing until just runny, but still slightly thick. Does that make sense?



Does that make sense? If the icing becomes too runny, add a little more icing sugar, and if it's too thick, add some more milk or orange juice.



To ice the cookies, place them onto a rack over a tray.



Drizzle on the icing.




Zest some lemons and limes. I did orange too but I would recommend against it because it can tend to stick together.



Sprinkle the zest onto the icing.



Allow the icing to set before digging in.



But one bite won't hurt!
