Everyday Banana and Oat Cookies

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Everyday Banana and Oat Cookies. They contain no butter and no eggs, and the main sweetness comes from the bananas and chocolate chips. You can add anything you like to these cookies - I put in some dried cranberries, white chocolate chips and toasted almonds. 

A Simple List of Ingredients:

1. Rolled Oats
2. Baking Powder
3. Bicarbonate of Soda
4. Salt
5. Vanilla Sugar
6. Banana
7. Vegetable Oil
8. Milk
9. Dried Cranberries
10. Toasted Almonds
11. White Chocolate Chips

Bismillah, let's begin!

Preheat the oven to Gas Mark 4.


Take 16 ounces (2 cups) rolled oats.



Leave 6 ounces (3/4 cup) of the oats in the bowl.



Put the remaining 10 ounces (1 and 1/4 cup) oats into a food processor.



Blitz until a fine flour is formed.



Add the fine oat flour to the oats in the bowl. You with me so far? Hope so.



Next, add:
1/2 teaspoon baking powder
1/4 teaspoon bicarbonate of soda
1/2 teaspoon salt



The original recipe used brown sugar, but I didn't have any so I used vanilla sugar - which is made by placing used vanilla pods and caster sugar in a jar.



Add 4 ounces (1/2 cup) vanilla sugar or brown sugar.



Whisk until combined.



For the wet ingredients, peel and slice half a banana, and place into a large mixing bowl.



Mash the banana.



Add 80 ml (1/3 cup) vegetable oil .. 



.. and 80 ml (1/3 cup) milk.



Whisk until combined. If you use brown sugar in the recipe, then add 1 teaspoon vanilla flavouring here too.



Chuck in the dry ingredients.



Give the mixture a good stir.



Chop the other half of the banana and add to the bowl along with ...



... 2 ounces (1/4 cup) dried cranberries ...



... 2 ounces (1/4 cup) sliced toasted almonds ...



... 1 packet white chocolate chips ...



Stir everything together, and then let the mixture stand for 15 minutes.



Place 2 tablespoons each of the mixture in mounds onto a greased and lined baking tray.



Bake for 25 minutes or until golden brown and crispy.



Place the cookies onto a wire rack to cool completely, but to be honest they are delicious whilst warm.
