This recipe is for Strawberry "Cheesecake". I say recipe, but it's more like an idea for a quick and easy dessert especially if you have unexpected guests come over. Also, there is no cream cheese in this dessert like in a normal cheesecake. But there is Greek yoghurt, which is a a healthier alternative. Once the Greek yoghurt has set, it tastes just like a cheesecake but without that guilty feeling!
A Simple List of Ingredients:
1. Greek Yoghurt
2. Fresh Strawberries
3. Lemon Curd
4. Digestive Biscuits
5. Vanilla Pod
6. Icing Sugar
Bismillah, let's begin!
Place a few digestive biscuits into a plastic food bag.
Tie the bag, and take a heavy object.
Bash the biscuits until they're crushed.
Pour a few tablespoons Greek yoghurt into a bowl.
Scrape out the seeds of a vanilla pod, and add to the yoghurt. You could also use a few teaspoons vanilla flavouring.
Stir in well.
Add 1 tablespoon lemon curd, or more if you like it lemony.
Add icing sugar, to taste.
Whisk until thick and creamy.
Place a layer of the crushed biscuits into a serving bowl.
Add a layer of the yoghurt mixture.
Top with sliced fresh strawberries ..
.. and shavings of milk chocolate. Allow to set in the fridge for a few hours before serving!
