Assalamu alaikum wa rahmatullahi wa barakatuhu!
This recipe is for Chicken Jalfrezi. It's a really simple curry to make, and always has bell peppers in it. The sauce is rich with tomatoes, and can be as spicy as you like. You could even make a vegetarian version by leaving out the chicken, and replacing it with a selection of your favourite veggies. Serve with boiled rice, naan or roti!

1. Boneless Chicken Pieces
2. Chopped Tomatoes Tin
3. Onions
4. Red Bell Peppers
5. Green Chillies
6. Fresh Garlic
7. Fresh Ginger
8. Salt
9. Ground Cumin
10. Ground Coriander
11. Ground Turmeric
12. Crushed Red Chillies
13. Vegetable Oil
14. Fresh Coriander
Bismillah, let's cook a Jalfrezi!
Peel and finely slice 2 onions.
Heat a few tablespoons vegetable oil in a pan, and fry the sliced onions ..
.. until soft and golden brown.

Peel and finely chop 2 garlic cloves.
Chuck the chopped garlic into the pan, and fry for 1 minute.
It's time for the chicken! Add 1 pound boneless chicken pieces. I added a few chicken thighs too.
Fry the chicken until sealed and white.

Take:
1/2 teaspoon turmeric
1 teaspoon salt
1 teaspoon crushed red chilli (or more if you like it spicy!)
Add to the chicken.
Stir to combine ..
.. and then stir-fry for 10 minutes.
Add 1 tin chopped tomatoes.
Stir to combine, cover and cook on a low heat for 20 minutes.

Take 1 inch grated fresh ginger.

.. 7 chopped green chillies ..

.. 2 chopped red bell peppers ..

.. 3 teaspoons ground cumin and 3 teaspoons ground coriander ..
Add all to the pan.
Stir-fry for 2 minutes on medium heat.
Add a handful chopped fresh coriander.
Heat through for a minute.
Serve immediately for a warm and spicy dinner!

ReplyDeleteYes you can. For this recipe, I would use 8 medium tomatoes. If you can, blend them with a little water. Good luck!

DeleteAoa. If i make 4 pounds of boneless breast chicken do i multiply the above ingredients by 4 times?
ReplyDeleteWasalaam! double the ingredients except: add 2 tins of tomatoes, 2 teaspoons red chilli and 14 green chillies. but of course, do everything according to your own taste. good luck!
DeleteJzk sis. So i would double the ground cumin to 6 tsp and ground coriander to 6 tsp as well? Just double confirming as inviting my inlaws over lolz. and can i serve this with egg fried rice? or is plain rice better? :)
DeleteYes, ground cumin and ground coriander will be 6 teaspoons each. And, I think plain boiled rice is better to compliment the jalfrezi flavour. :)
