Chicken, Baby Spinach and Cherry Tomato Pasta

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Chicken, Baby Spinach and Cherry Tomato Pasta. I made this for dinner a few weeks ago and it was so tasty. The chicken was seasoned really well and the cherry tomatoes added a juicy kick. Add to that a light and creamy sauce, and it's become one of my favourites.

A Simple List of Ingredients:

1. Olive Oil
2. Plain Flour
3. Bowtie Pasta
4. Boneless Chicken Pieces
5. Double Cream
6. Garlic
7. Fresh Basil
8. Mature Cheddar
9. Cherry Tomatoes
10. Salt and Pepper
11. Baby Spinach
12. Vegetable Stock

Bismillah, let's start!



Fill a pot with boiling salted water, and add 2 mugs bowtie pasta. Cook according to package instructions. 




Drain the pasta when cooked, and set aside.




Take 1 pound boneless chicken pieces, and place into a mixing bowl.




Sprinkle 3 tablespoons plain flour onto the chicken.




Season well with salt and pepper.




Stir until the chicken is properly coated.




Drizzle a few tablespoons olive oil into a saucepan.




Place the coated chicken pieces into the pan.




Cook the chicken for about 10 minutes or until golden brown and fully cooked through.




Remove the chicken onto a plate, and set aside.




Drizzle in a little more olive oil into the same pan.




Take 4 peeled and finely chopped garlic cloves.




Cook the garlic on medium heat, until it is fragrant and is lightly golden brown.




Add 1 cup vegetable stock.




Let the stock reduce for about 5 minutes.




Take a 180 gram bag of baby spinach, and wash thoroughly.




Add the baby spinach to the pan.




Take 1 carton cherry tomatoes, and slice in half.




Add the cherry tomatoes to the pan. When the food looks this bright, you know the dish is going to be good!




Cook for a minute or so until the baby spinach starts to wilt.




Add 3/4 cup double cream.




Season with salt and pepper, and let the cream bubble for 1 minute.




Add the cooked chicken.




Add the cooked pasta.




Add a handful chopped fresh basil.




Grate in mature Cheddar cheese, to taste.




Stir everything well to combine, and serve straight away!
