Stir Fried Thai Vegetables

Assalamu alaikum wa rahmatullahi wa barakatuhu!

This recipe is for Stir Fried Thai Vegetables. Thai food is amazing and has so many different but balanced flavours to it. This dish is so quick to put together, and is sweet, sour, salty and spicy all in one mouthful. It must be tried to be believed!

A Simple List of Ingredients:

1. Vegetable Oil
2. Coconut Milk
3. Red Chilli Powder
4. Soy Sauce
5. Fish Sauce
6. Brown Sugar
7. Stir-Fry Vegetable Mix
8. Green Chillies
9. Garlic
10. Ginger
11. Fresh Lime Juice

Bismillah, let's begin!

First, to make the stir-fry sauce, place 2/3 cup coconut milk into a bowl.

Add 2 and 1/2 tablespoons fish sauce.

Add 1 and 1/2 tablespoons soy sauce.

Add 1/2 teaspoon red chilli powder.

Add 2 and 1/2 teaspoon brown sugar.

Add the juice of one lime.

Stir to combine, and set aside.

Next, take:
1 thumb sized piece peeled and sliced ginger
4 peeled and sliced garlic cloves
2 sliced green chillies

Heat a few tablespoons vegetable oil in a pan, and add the ginger, garlic and chillies. Fry for a minute until golden brown.

Take one pack vegetable stir-fry. I used a mushroom stir-fry with carrots, beansprouts, cabbage and onion. You could slice your own vegetables, if you want.

Add the vegetables to the pan.

Add 1/3 of the sauce, and fry for 1 minute.

Add the remaining sauce, and fry for 3 minutes.

Serve straight away with rice or noodles!

Wasalaam!
