This recipe is for Spicy Scrambled Eggs and Potatoes. It is a really simple and easy dish to make and you probably have all the ingredients in your kitchen right now. Normally, we make this at the weekend for breakfast, but sometimes if we need a quick meal, then this is a filling and tasty option!

1. Onions
2. Vegetable Oil
3. Potatoes
4. Salt
5. Red Chilli Powder
6. Ground Coriander
7. Water
8. Green Coriander
9. Green Chillies
10. Eggs
Bismillah, let's start!
First, peel and thinly slice 1 onion.
Heat a few spoons vegetable oil into a large pan, and add the sliced onions.
Fry the sliced onions until just turning golden brown.
Peel and slice 2 potatoes into thin slices.
Add the potatoes to the pan.
Season with salt, to taste.
Add 1 teaspoon red chilli powder.
Add 1 teaspoon ground coriander.
Add 1/4 cup water.
Stir to combine.
Cover and simmer for about 10 minutes.
Place 4 eggs into a bowl, and mix using a fork.
Take a handful chopped green coriander and 2 chopped green chillies.
Add the coriander and chillies to the eggs, and mix to combine.
Add the egg mixture to the pan.
Stir-fry for a minute or two until the eggs are cooked.
Serve straight away with toast, bread, roti or even paratas!

DeleteI'm a new cook. How much salt did you add sister?
ReplyDeleteFor 4 eggs, I would use 1/2 teaspoon but you can always sprinkle more on top, if needed. :)

DeleteHi, i love your recipes ����. If I was making this for three people how much onion, egg and potato would I use?
ReplyDeleteI think this recipe is enough for 3 people especially if you add toast on the side. If you're worried, you can add an extra egg.
