Red Velvet Cupcakes

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Red Velvet Cupcakes. These cupcakes have been my nemesis for a long time. I have had so many disasters with them in the past, and after many failed and unsuccessful attempts, I have found a recipe that works - alhamdulillah!

A Simple List of Ingredients:

1. Self-Raising Flour
2. Cocoa Powder
3. Salt
4. Baking Powder
5. Bicarbonate of Soda
6. Butter
7. Caster Sugar
8. An Egg
9. Vanilla Flavouring
10. Buttermilk
11. Red Food Colouring Gel 
12. Icing Sugar
13. Cream Cheese
14. Milk

Bismillah, let's start!

Preheat the oven to Gas Mark 4.



In a bowl, place 10 ounces self-raising flour




Add 2 tablespoons cocoa powder.




Add:
1/4 teaspoon salt
1/4 teaspoon bicarbonate of soda
1/4 teaspoon baking powder




Stir everything to combine, and set aside.




Into the bowl of a Kitchen Aid mixer, place 2 ounces softened butter.




Add 6 ounces caster sugar.




Cream the butter and sugar until light and fluffy.




Add 1 egg and 1 teaspoon vanilla flavouring




Mix until creamy and well combined.




Next, take 6 fluid ounces buttermilk. If you do not have it, mix equal parts of milk and water.




Add half of the flour mixture and half of the buttermilk.





Add the remaining flour mixture and the remaining buttermilk, and mix well to combine.




Next, take red food colouring gel.




Add a tiny bit at a time because it's quite strong.




Stir the food colouring in until you get the red colour you want.




Spoon the mixture into cupcake cases. 




Bake in the preheated oven at Gas Mark 4 for 20 minutes or until cooked through.




Cool the cupcakes completely on a wire rack while you make the cream cheese icing.




For the icing, place 8 ounces icing sugar in a bowl.




Add 4 ounces softened cream cheese.




Add 2 tablespoons softened butter




Add 1 tablespoon milk.




Add 1 teaspoon vanilla flavouring




Whisk everything together until combined. 




Pipe or spread the icing onto the cupcakes, and serve!
