Chicken Shawarma

Assalamu alaikum wa rahmatullahi wa barakatuhu!

This recipe is for Chicken Shawarma. It is really difficult to recreate the taste of shawarma at home, but this recipe I think, does it justice. The key is to leave the chicken marinading overnight for maximum flavour, and to have the grill smoking hot when cooking.

A Simple List of Ingredients:

1. Plain Yoghurt
2. Olive Oil
3. Garlic
4. White Pepper
5. Ground Coriander
6. Salt and Pepper
7. Curry Powder
8. Ground Allspice
9. Lemon Juice
10. Boneless Chicken Pieces
11. Pitta Bread
12. Salad, of your choice
13. Green Yoghurt Chutney

Bismillah, let's begin!

Into a large bowl, place 2 tablespoons plain yoghurt.

Add 2 tablespoons olive oil.

Add 4 crushed garlic cloves.

Add 1 teaspoon ground white pepper.

Add 1 teaspoon ground coriander.

Add 1 teaspoon salt.

Add 1 teaspoon ground black pepper.

Add 1 teaspoon curry powder.

Add 1 teaspoon ground allspice.

Add the juice of 1/2 a lemon.

Stir well to combine.

Add 1 pound boneless chicken pieces, stir, cover and leave overnight in the fridge to marinade.

Heat a grill pan until smoking hot, and place the marinaded chicken on.

Cook the chicken for a few minutes until cooked through.

Serve straight away in a pitta with salad, yoghurt chutney and chilli sauce. I didn't have any pitta that day so had to make do with a panini but it was still yummy!

Wasalaam!
