This is a "finger licking good" Nutella cheesecake. It's very rich and is great for special occasions because it can be prepared in advance and chilled in the fridge. If you're not gluten intolerant, substitute the biscuits for regular biscuits.
A Simple List of Ingredients:
1. Gluten-Free Digestive Biscuits
2. Butter
3. Nutella Chocolate Spread
4. Sugar
5. Philadelphia Soft Cheese
6. Icing Sugar
7. Double Cream
8. Chocolate Curls (optional)
Bismillah, let's start!
Crush 2 packets gluten-free digestive biscuits in a food processor. Place the crushed biscuits into a large bowl.
Add 3 tablespoons melted butter.
Add 2 tablespoons of Nutella.
Add 1 tablespoon sugar.
Mix until the mixture is like dry gravel. (We put less biscuits in first, and then realised the mixture was too wet so had to add another packet of biscuits).
Spoon the mixture into a cake tin, and press to smooth down. Chill in the fridge for an hour or two until set. Or if you want it done quicker, put in the freezer for an hour, like we did!
To make the topping, place 10 ounces of soft cheese into a standing mixer bowl.
Add 3 tablespoons of Nutella spread. You can more or less Nutella depending on how chocolatey you want it.
Add 2 tablespoons of icing sugar.
Finally, add 1/4 cup of double cream.
Using the whisk attachment, whisk the mixture until just becoming stiff.

Remove the set biscuit base from the fridge/freezer.
Pour on the filling.
Smooth out the filling.
You can leave it plain, or decorate with chocolate chips ...
...and chocolate curls.
Chill for another few hours in the fridge, slice and enjoy!

Method
1. Blend the biscuits in the food
processor until they become crumbs. Place them into a mixing bowl. Add the
melted butter, Nutella and sugar. Mix well and then press the mixture into a
cake tin. Place into the fridge to chill.
2. To make the filling, put the
cream cheese, Nutella, icing sugar and double cream into a food mixer. Whisk
until creamy.
3. Pour the mixture over the
biscuit base and smooth out. Decorate with chocolate chips and curls, and then
chill in the fridge for a few hours.
4. Slice and serve!
