Gingerbread Cookies

Assalamu alaikum wa rahmatullahi wa barakatuhu!



Gingerbread Cookies are great at this time of year because they have the warming flavours of ginger and cinnamon in them to help us battle through the cold winter months. On a snowy winters night, a batch of these cookies, fresh out of the oven will disappear in minutes!

A Simple List of Ingredients:

1. Plain Flour

2. Bicarbonate of Soda
3. Ground Ginger
4. Ground Cinnamon
5. Butter
6. Light Brown Sugar
7. Eggs
8. Golden Syrup

Bismillah, let us begin!



Place 12 ounces of plain flour into a large bowl.



Add 1 teaspoon bicarbonate of soda.



Add 2 teaspoon of ground ginger.



And, 1 teaspoon of ground cinnamon.




Add 5 ounces of butter.




Blend together in a food processor or mixer until the mixture looks like breadcrumbs.




Next, take 6 ounces of light brown sugar.





Add the brown sugar to the flour mixture.




Stir until combined.



Place 4 tablespoons of golden syrup into a small bowl.



Add 1 egg to the golden syrup.






Lightly beat the syrup and egg together.






Add the egg and syrup mixture to the food processor. Mix until the mixture comes together.






Take the dough out and briefly knead until smooth.






Wrap in clingfilm and chill in the fridge for 15 minutes.

Preheat the oven to Gas Mark 4.




Roll the dough out to 1/4 inch thickness on a floured surface.






Using cookie cutters, cut out the cookies.






Place onto a greased baking tray.






Bake for 15 minutes until golden brown. Allow to cool for 10 minutes on the tray if you want them completely firm.

·     2 teaspoon Ground Ginger
·     1 teaspoon Ground Cinnamon
·     5 ounces (141 grams) Butter
·     6 ounces (170 grams) Light Brown Sugar
·     4 tablespoons Golden Syrup
·     1 Egg

Method

1. Place the flour, bicarbonate of soda, ground ginger, ground cinnamon and the butter. Blend together with a mixer until it resembles breadcrumbs.

2. Next, add the brown sugar to the mixture and stir.

3. In a small bowl, lightly beat the golden syrup and the egg. Add this to the mixture. Mix until combined.

4. Knead the mixture until smooth. Wrap in clingfilm and chill for 15 minutes in the fridge.

5. Preheat the oven to Gas Mark 4. Roll the dough out to ¼ inch thickness on a floured surface. Cut the cookies with a cookie cutter.

6. Place them onto a greased baking tray and bake for 15 minutes. Allow to cool slightly before serving!
