This recipe is for my posh macaroni cheese. It is my normal macaroni cheese recipe but with a few added extras. These extras make this a posh macaroni cheese, in my opinion.
A Simple List of Ingredients:
1. Butter
2. Plain Flour
3. Vegetable Oil
4. Milk
5. Cheese
6. Salt and Pepper
7. Dried Macaroni Shells
8. Spring Onions
9. Sundried Tomatoes
10. Cooked Lamb Sausage
11. Breadcrumbs
12. Cheese

To make my basic cheese sauce, melt 3 tablespoons of butter in a saucepan.
Once the butter has melted, add 3 tablespoons of plain flour.
Cook the flour and butter together for a few minutes, whilst constantly stirring. If the flour starts to stick, add a drop of vegetable oil.
Let the flour and butter become a smooth paste and start to bubble.
Next, add a few drops of milk at a time, constantly stirring to combine.
Continue adding milk until you fill about half the pan.
Slice 3 ounces of Cheddar cheese.
Add the cheese to the white sauce, and stir to allow to thicken.
Season with salt and pepper, to taste.
Turn off the heat, and your cheese sauce is ready!
The next ingredient is dried macaroni shells.
Cook the macaroni according to the packet instructions.
Now for the extras, soften 8 chopped spring onions. You could add these raw, but I like them cooked.
Next, take 2 tablespoons of chopped sundried tomatoes.
And finally, take 2 lamb sausages, sliced into pieces. If you don't have lamb sausage, you can leave it out or put in any other leftover meat.
To assemble, take a large ovenproof dish, and spread out the cooked macaroni.
Add the lamb sausage, spring onions and sundried tomatoes, and stir to evenly.
Pour in all the cheese sauce.
Stir to combine.
For the topping, take 6 ounces breadcrumbs.
And 6 ounces of grated cheese.
Sprinkle the top with the breadcrumbs and cheese.
Bake in the oven at Gas Mark 4 for 30 minutes.
Serve piping hot on a cold winters night!

ounces (85 grams) Cheddar Cheese
· Salt
and Black Pepper, to taste
· 10
ounces (283 grams) Macaroni Pasta
· 8
Spring Onions, sliced
· 2
tablespoons Sundried Tomatoes, chopped
· 2
Lamb Sausages, cooked and sliced
· 6
ounces (170 grams) Breadcrumbs
· 6
ounces Grated (170 grams) Cheddar Cheese
Method
1. First, to make the cheese sauce, melt the
butter in a saucepan. Add the flour and cook for 2 minutes.
2. Add the milk and allow to thicken on a low to
medium heat. Then, add the cheese and season with salt and black pepper. Let the
sauce thicken and then remove from the heat. Set aside until needed.
3. Cook the macaroni according to packet
instructions.
4. Prepare the spring onions, sundried tomatoes
and lamb sausage.
5. To assemble, place the cooked macaroni in a
oven dish. Mix in the onions, tomatoes and sausage. Pour in all the cheese
sauce and stir.
6. Sprinkle on the breadcrumbs and cheese. Bake in
the oven at Gas Mark 4 for 30 minutes.
7. Allow to cool slightly before serving!
