Lockdown Life April 2020.

In the Name of Allah, Most Gracious, Most Merciful

Assalamu alaikum wa rahmatullahi wa barakatuhu!

Ok, nobody faint please.

Yes, this is my first proper blogpost since September 2019.
Sorry for the looooooong absence. Truth be told, I have no excuse for not being here except maybe that I was a tiny bit busy with work and had also kind of fallen out of love with the whole blogging thing. I believe in doing things properly and if my heart isn't in it, you guys will know. The break felt really good and now here we are - April 2020. I don't know if this is a permanent return so for now I will just enjoy this moment and share my current life in lockdown. Today is day 40 for us and honestly, it's become the new normal. Ramadan has just started so we'll see how that affects things but so far, alhamdulillah not bad.

Let me share some of what we've been cooking:

I cooked kung pao chicken for dinner after what was to be my last day at work before the lockdown.

My mum's saag freezer stash was very handy for dinner with fresh roti.

I made a batch of vegetable spring rolls to go into the freezer. Of course, we had to sample some first.

Mum's Mother's Day dessert request - sticky toffee pudding with whipped yoghurt cream.

Working from home isn't so bad when you get to eat your Mum's fresh chicken pulao with salad raita for lunch.

A spicy mushroom noodle soup for an early lunch before teaching an online class.

I finally got to try Korean braised chicken and I was not disappointed. It was delicious!

My Mum decided to buy a 10-pack of croissants so obviously bakewell almond croissants were on the breakfast menu.

My kind of ice cream. I love anything sweet and salty.

It was delicious!

As was this spicy chicken pepper filling that we used to fill paratha rolls with.

Chicken salad for dinner!

Totally eyeballed this (using this recipe as a guide) and it was pretty good.

We ate it as a side to Korean fried chicken which can I just say, was the best meal that I've cooked so far in this lockdown.

Although I must admit that I am enjoying the extra time that I have to now be creative.

Finally did some painting the other day and tested out a strawberry latte recipe which surprisingly enough, doesn't contain coffee.

Speaking of coffee, the coffee machine was dragged out of the storage shed a few days ago. My dad is its biggest fan so far!

The weather here has been beautiful lately.

My mornings almost always begin in the garden.

Got bored with the same old breakfasts so decided to put cereal onto my pancakes. I used Crunchy Nut and Weetos.

Finally cleared the kitchen table so we can eat Iftar on it this Ramadan. This was a late brunch cheese toast.

We had cream cheese that needed using up so I made a small version of chocolate orange cheesecake.

My cousins are currently neighbourhood BBQ royalty. Social distancing means a package was brought to us.

We finally deep-cleaned and organised the kitchen cupboards. Will share a post here but the pictures are already in my Instagram highlights.

Smoky chicken tikka salad situation.

Sunday afternoon cinnamon sugar doughnuts.

I made this really spicy Korean stir-fried chicken for a late lunch one day. I had to teach an online class after eating it and was still suffering from the spice throughout. Don't think my students noticed though! ðŸ¤£

The leftover rice made the best fried rice on a Friday night. It has become a bit of a speciality of mine!

The most beautiful salmon pan-fried with crispy skin on a sunny Saturday afternoon. We ate it with a garlic lemon butter sauce. I used this recipe.

You know it's pasta night when there are tomato sauce splashes on the kitchen tiles. I made this recipe.

Finally, we can't travel but the wonder of the internet means that the world can come to us. This was a Sunday morning spent watching African elephants lazily enjoying the sunshine.

Printed out a Ramadan planner shared by one of my colleagues.

Found my paints for ....

... this paint-by-numbers that I've had for ages. Looking at this photo, I feel like ironing it. 😂

Vegetable pancakes happening for an easy dinner.

Dipping sauces to the ready!

Naan, shorba, chicken tikka for the last dinner before Ramadan.

The Ramadan crescent moon photographed by my Dad.

It feels so good to be posting here again. I cannot wait to share more especially with Ramadan starting here tonight.

Keep me in your duas please!

Assalamu alaikum wa rahmatullahi wa barakatuhu!
