Current Favourites #8: Stuffed Roast Chicken and More!

Assalamu alaikum wa rahmatullahi wa barakatuhu!

In the Name of Allah, Most Gracious, Most Merciful

We have been eating all of the roast chicken.
Not sure how it happened but it seems to be the comfort food of choice in these parts as we contend with snow, dark days and plenty of frost. How was the snow where you are? Ours was so thick and stayed for a few days before melting. I loved it! I hope you're happy, content and ready to hibernate during the holidays. Have a good one!

My current favourites:

I made a batch of my lamb pulao for a weekend dinner.
It was so warming and delicious with a simple salad and spicy green yoghurt chutney.
Leftover cooked chicken put to good use in ...
... a puff pastry plait.
We grow garlic chives and I put a bunch of them into my ....
Roasted sweet potato, carrot, spring onion and green chilli to eat with ...
.... crispy fish (from Aldi) and mushy peas!

One of the many spicy roast chickens we've enjoyed in this freezing weather. Similar recipe here!
To eat with the chicken, I chopped up cabbage, peppers, cucumber, cherry tomatoes and chillies.
They were tossed with mint sauce and lemon juice (similar to this salad) and eaten with the spicy chicken, boiled rice and the classic green yoghurt chutney.




A Winter sunrise in all its glory.
Leftover boiled rice stir fried with chicken, veggies, passata and spices from the cupboard.
It's definitely the weather for jacket potatoes.

Definitely the weather for spicy lemon roast chicken with gravy.
I put Diet Coke into my chicken and vegetable stew.
It was delicious served over steamed rice.
