Dunking Doughnuts + Jersey Royals + Peach Pavlovas: 7 June - 13 June 2014

Assalamu alaikum wa rahmatullahi wa barakatuhu!

This week has been 3 weeks before Ramadan, and in our house, it is "Night Prayer and Start Thinking About Charity Week". 




The nights are so short here in England. Isha prayer begins tonight at approximately 11:00 pm and the Fajr prayer starts at around 2:40 am. During Ramadan, it will be even shorter which means we probably won't be sleeping after Isha and Taraweeh. Instead, we will, inshallah, be spending the time before the Sehri meal, praying extra salah, reading the Quran and making lots of dua. Then, after eating Sehri and praying Fajr, it'll be time to snooze before the day really begins! I cannot wait - I hope you guys are equally if not more excited!

 Saturday - The weekend began with what felt like monsoon rain.
The skies were grey and rain hammered on the roof all morning long.
Breakfast was a real treat especially for the weekend.
Spicy scrambled eggs, potato waffles and spaghetti hoops
With all that horrible weather outside, it seemed the perfect day to make Doughnuts.

After making doughnuts, I was cornered by my mother into another pre-Ramadan tradition. 
Folding and freezing samosas!
 And, obviously we had to taste some. The recipe for Pakistani samosas can be found here.
I filled these with this lamb filling but you can also try out this veggie alternative. And, if you have any leftover (why would you?) try out this!
After all that heat in the kitchen, an ice lolly was called for.

Sunday - After all that rain, it was really hot and humid here on Sunday. Lunch just had to be a simple, salad-filled sandwich.
Wholemeal bread, cheese and onion deli filler, tomato and cucumber.
Along with a glass of ice cold Homemade Lemonade.
The rest of the doughnuts were fried on Sunday.
Before being dunked into a vanilla and chocolate glaze and decorated with sprinkles.

Monday - Dinner was pan-fried salmon fillets marinated in red chilli powder, salt, ground cumin, ground coriander, garlic powder, ginger powder, oil, lemon juice and dried fenugreek with stir fried kale, spring greens, cabbage, carrots and red pepper flavoured with salt, pepper, lemon juice and red chilli powder. Finally, there were boiled, crushed potatoes.

Tuesday - Breakfast was simple - boiled eggs, salt, black pepper, wholemeal toast.

Here are carrots, courgettes, chicken salami, red peppers, spring onions roasting away for dinner.

Wednesday - This little one is a pro with a phone!
Chicken Biryani  for lunch!

My mum bought another basil plant since her first one died. You can buy it here!
I tried out this chocolate bar. It was not too sweet which is always good.
And, I discovered that Starbucks sell their ground coffee in supermarkets.

 Thursday - Breakfast was wholemeal toast, natural peanut butter, Cadbury chocolate spread.

The seeds that I planted a few weeks back, apparently need to be put into bigger pots.
And, the garden arch has plants growing up it too!
We also discovered a tiny strawberry plant growing in our garden this week too.
My mum's roses are getting on well too.

After a hot morning in the garden, a cool plate of fruit was in order - oranges, peaches, apples, grapes, clementines, bananas.
 Lunch was a sandwich - a seeded panini filled with tuna, sweetcorn, mayo, peppery salad leaves, cucumber, tomato.
On the table also were these McCoys Chargrilled Steak and Peri Peri CrispsWest Indian Hot Pepper Sauce and a jalapeno relish.
 Followed by 1/2 pot of my new fave yoghurt.
A quick dessert was needed in the afternoon so I took a meringue nest.
Dolloped on vanilla whipped cream.
Thinly slice 1/2 a peach and arrange on top.
And, there you have it - a mini peach pavlova!
For dinner, we were having Jersey Royal potatoes.
It was a really hot and long day so a little caffeine was in order.
Fresh peas were podded for dinner.
If you have the chance, use fresh peas.
They taste so good!
 The Jersey Royals were boiled then crushed slightly. They were then seasoned with salt, pepper, garlic, rosemary and olive oil, and then roasted until crispy.

Dinner was finally served: roasted Jersey Royals, steamed fresh peas and carrots, chicken korma. 
The chicken korma was made by frying a few whole spices in oil. Then, onions were browned. Tomatoes were added along with ground spices. Allow the liquid to cook out. The chicken and yoghurt went in and everything was simmered. Dried fenugreek was added at the end for extra flavour. When it's cooked, it was time to eat!
Friday: I have been loving this garlic sauce.
Dinner was leftovers from the fridge with chicken strips grilled with a sticky Chinese barbecue glaze.

Homemade Doughnuts - fluffy, light doughnuts glazed with a vanilla glaze and a chocolate glaze.
