Chicken Korma

Assalamu alaikum wa rahmatullahi wa barakatuhu!




This recipe is for a Chicken Korma. It is a Indian curry which is made with yoghurt and spices, and isn't usually as spicy as a normal curry. The curry makes a light meal, served with boiled rice.

A Simple List of Ingredients:

1. Onions
2. Ginger
3. Garlic
4. Fennel Seeds
5. Cumin Seeds
6. Green Cardamoms
7. Black Peppercorns
8. Black Cardamoms
9. Vegetable Oil
10. Boneless Chicken Pieces
11. Salt
12. Red Chilli Powder
13. Ground Turmeric
14. Tomatoes
15. Yoghurt
16. Green Coriander
17. Green Chillies

Bismillah, let's start!



Peel 2 onions, 3 garlic cloves and 1 inch ginger.




Roughly chop the onions, garlic and ginger. Blend to a paste in a blender, and add a drop of water.




Heat a few tablespoons vegetable oil in a large pan, and add the paste. Brown on a medium heat while you make the spice paste.




For the spices, take:
1 teaspoon fennel seeds
1 teaspoon cumin seeds
2 black cardamoms
3 green cardamoms
5 black peppercorns
4 cloves




Grind the spices to a powder, in a spice blender.




The onion paste should be a light golden brown by now.




Add the spice mix.




Stir-fry for 5 minutes.




Add 1 pound boneless chicken pieces.




Stir in the chicken, and cook until it goes white.




Take:
1 teaspoon salt
1 and 1/2 teaspoon red chilli powder
1/2 teaspoon ground turmeric




Add to the pan.




Stir in.




Take 2 tomatoes, and roughly chop.




Blend with a little water to make a paste.




Add to chicken.




Stir in and cook for 5 minutes.




Add 4 tablespoons plain yoghurt.




Stir in.




Cover and simmer for 10 minutes until the chicken is fully cooked.




Taste for seasoning.




Slice 2 green chillies, and a handful of green coriander




Add to the korma, and stir in.




Serve straight away with boiled rice or naan!
