Eton Mess

Assalamu alaikum wa rahmatullahi wa barakatuhu!



Eton Mess is something that I had been wanting to make for a long time, even though it's the middle of winter, and this is usually a summer pudding.
It is a traditional English dessert which uses strawberries, cream and pieces of meringue. It is perfect for using up leftover homemade or shop bought meringues.
I promise you that, inshallah, this dessert will bring a little brightness to these dull winter days, and bring hope of the summer to come!

A Simple List of Ingredients:

1. Strawberries
2. Double Cream
3. Fresh Orange Zest
4. Icing Sugar
5. Fresh Orange Juice
6. My Mini Meringue Cookies or shop bought meringues

Bismillah, let's start!



To start, slice 1 pound of fresh strawberries.



Add the juice of 1 orange, and stir in.



Next, add 2 teaspoons of icing sugar.



Stir to combine, and set aside.



For the cream, place 1 pint of double cream into a bowl.



Add the zest of 1 orange.



Stir to combine.



Next, add 3 tablespoons of icing sugar.



Whip the cream until soft peaks form.



To assemble one portion of Eton Mess, take 3 of My Mini Meringue Cookies or 3 shop bought mini meringues.



Break the meringues into pieces. 



Add 3 tablespoons of the whipped cream, and mix.



Next, add 2 tablespoons of the strawberries.



Stir to combine.



Spoon the mixture into a serving glass bowl.



Top with more strawberries.



Garnish with crushed meringues, and serve straight away!

Ingredients

For the Strawberries
·     1 pound Strawberries, sliced
·     Juice of 1 Orange
·     2 teaspoons Icing Sugar

For the Cream
·     1 pint Double Cream
·     Zest of 1 Orange
·     3 tablespoons Icing Sugar

To Assemble
·     3 Mini Meringues

Method

1. Mix the strawberries, orange juice and icing sugar together, and set aside.

2. Place the cream into a mixer bowl, and stir in the orange zest. Add the icing sugar and whisk until soft peaks appear.

3. To assemble the Eton Mess, break up the meringues in a bowl. Add 3 tablespoons of the whipped cream and 2 tablespoons of the strawberries, and mix together.

4. Spoon the mixture into a serving dish. Top with more strawberries and more crushed meringue. Serve!
