This recipe is for my mothers' chicken curry.

Curry is made daily in my house and my mother has many variations, as do all Pakistani mothers. This is one that she made recently and it turned out quite well.

A Simple List of Ingredients:
1. Whole Chicken Pieces
2. Tomato Puree
3. Salt
4. Lemon Juice
5. Curry Powder
6. Plain Yoghurt
7. Sunflower Oil
8. Onions
9. Garlic
10. Water
11. Ground Coriander
12. Ground Cumin
13. Red Chilli Powder
14. Ground Turmeric
15. Garam Masala
16. Tomatoes
17. Green Chillies
18. Fresh Coriander
19. Paprika Powder
Bismillah, let's get started!
Raw meat alert! Sorry, it's because some people can't stand the sight of raw meat.
Well, to cook in the kitchen, you are going to have to get used to it.
The first ingredient is 1 Whole Chicken, cut into pieces.
The first thing to do is marinade the chicken, and for that the first ingredient is tomato puree.
To a large mixing bowl, add the chicken and 1 tablespoon Tomato Puree.
Add 1 teaspoon Salt.
Add the juice of 1 Lemon.
Add 1 teaspoon Curry Powder.
Add 3 tablespoons Plain Yoghurt.
Stir to combine, and keep in the fridge overnight, if possible.
Heat a few tablespoons Sunflower Oil in a saucepan.
Add 1 teaspoon Salt.
Add the juice of 1 Lemon.
Add 1 teaspoon Curry Powder.
Add 3 tablespoons Plain Yoghurt.
Stir to combine, and keep in the fridge overnight, if possible.

Add the garlic cloves to the pan.
Fry the onions and garlic until golden brown. Add a quarter cup Water and cook for one minute.
Add the marinaded chicken to the pan, and fry for about 7 minutes.
Add 1 teaspoon Ground Coriander.
Add 1 teaspoon Ground Cumin.
Add 1 teaspoon Salt, or to taste.
Add 1 teaspoon Chilli Powder, or to taste.
Add 1 teaspoon Garam Masala.
Cook for about 5 minutes on a medium heat, and then add another quarter cup of Water, and stir in. Then lower the heat and cook covered for approximately 40 minutes.
The next ingredients are 2 Tomatoes and a Fresh Green Chilli. You can add more chilli, if you want.
Slice the tomatoes and chilli, and add to the chicken.
Next, add a handful of chopped Fresh Coriander.
Add 1 teaspoon Paprika.
And it's done!
Serve with rice or roti.

· Few tablespoons
Sunflower Oil
· 2 Onions,
peeled and sliced
· 5 Garlic
Cloves, peeled
· Water
· 1
teaspoon Ground Coriander
· 1
teaspoon Ground Cumin
· 1
teaspoon Salt
· 1
teaspoon Red Chilli Powder
· ½ teaspoon
Ground Turmeric
· 1
teaspoon Garam Masala
· 2
Tomatoes, sliced
· 1 large
Jalapeno Pepper, sliced
· Handful of
Fresh Coriander, chopped
· 1
teaspoon Paprika
Method
1. First,
marinade the chicken. Place the chicken, tomato puree, salt, lemon juice, curry
powder and yoghurt, and mix well. Leave to marinade for a few hours or overnight.
2. For the curry, heat the oil in a saucepan. Add
the onions and garlic and fry until golden brown. Add ¼ cup water and cook for
1 minute.
3. Add the marinated chicken to the pan, and fry for
7 minutes.
4. Add the ground coriander, ground cumin, salt,
red chilli powder, ground turmeric and garam masala.
5. Cook for 5 minutes and then add ¼ cup water. Bring
to the boil, and cook covered for 40 minutes or until the chicken is cooked
through.
6. Finally, add the tomatoes, pepper, coriander
and paprika. Stir well and serve!

As recommend I left the chicken to marinade over night. It tasted absolutely delicious! I won't hesitate to make this again, and I'll certainly be trying some of your other recipes. Thanks for sharing! :)

I spend a lot of time surfing the net looking for true authentic Pakistani dishes and by chance this is the first time I came across your blog. Can I start by congratulating you for the way you have clearly and concisely presented your recipes with pics during each step. You are a very knowledgeable and kind individual to take the time to share this information with us folk in search of the holy grail of Pakistani cooking. Just reading through your recipes has got my mouth watering, something other recipes haven't been able to do. Whoever has the good fortune to sample the dishes you make must be very happy indeed. I tried your yummy chicken today and it blew me away and I thought I was a very good cook but your dish is something else. Look forward to trying out many more and please keep adding as you now have a new fan over here in the Midlands.
