Summer 2020!

Assalamu alaikum wa rahmatullahi wa barakatuhu!

In the Name of Allah, Most Gracious, Most Merciful

I'm just dropping in today to share some snaps from Summer 2020.
It's been a weird one because of you-know-what but we've still managed to enjoy ourselves nonetheless. As we prepare for the new season ahead, I've been re-reading this quote over and over again to keep myself grounded. I hope it brings you some comfort too.

amidst all that is changing around you, hold on to what is beautiful and true.

a Sunday afternoon spent up in the hills.

there is calm in the wild.

we woke up to the greyest skies today. time for more giant cookie baking!

sisters waiting patiently for our casual afternoon lunch and tea to begin. I was late as usual! 😁

on the menu: tuna nicoise salad.

 a selection of brioche sandwiches.

and, a delightful lemon raspberry cake.

plus I brought giant cookies - pictured at the bottom are rainbow and brown sugar chocolate chunk.

such a fun socially-distanced catch up! we were talking about how unbelievable this year has turned out to be. could you have imagined all this to have happened in January? 🤷🏽‍♀️

this paper doll will follow my niece around all Summer long.

a leisurely Sunday evening spent making veggie pizzas.

not much sun these days but the sun-catchers are still beautiful.

was in the mood for a coffee chocolate iced situation so blended up: a shot of Americano + chocolate ice cream + chocolate spread + ice.

I treated my Mum to a fish and chips dinner.

new favourite smoothie combo - orange juice + frozen raspberries + frozen banana + natural peanut butter + honey + baby spinach.

the Pakistani mangoes are in!

and that means plenty of creamy mango milkshakes.

super impressed by my Saturday afternoon brioche doughnuts.

rolled in sugar and filled with vanilla custard.

sundays spent zipping through the green hills are my favourite.

you can always count on Mum to be on rainy day pakora duty.

spending the day at Knowsley Safari Park.

shame that the lions were snoozing!

made tiramisu for dessert one day and added a layer of Oreos.

cooked a very summery mint and lemon chicken traybake. recipe from this cookbook.

getting myself used to early morning breakfasts again.

grilled smoky peri peri chicken one afternoon after work and made the whole house choke!

croissant sandwiches for lunch. recipe is here!

couldn't resist baking this antipasto pizza.

it made another great lunch!

homemade chilli oil wontons from this cookbook.

everyone you meet is fighting a battle you know nothing about. be kind. always.

threw vegan pepperoni onto a frozen pizza and called it lunch with salad and garlic sauce.

we put potatoes into our chicken pulao and didn't regret it.

used up some sweet potatoes in fritters.

forever on the lookout for rainbows.
